Vegetarian Tortellini Soup
I’m always on the lookout for easy meat free meals to balance my week out and this vegetarian tortellini soup is so packed full of fresh veggies you don’t even miss the meat.
You can use any vegetarian tortellini you find, mine was spinach and ricotta cheese tortellini which complemented the rest of the green veggies in the soup. (For more healthy inspiration, here are Mediterranean Snack Ideas.)
There’s also lots of vegetables from the grocery store that you can include in your soup, here are some ideas:
- Zucchini
- Spinach
- Onion
- Garlic
- Leek
- Celery
- Carrots
- Broccoli
- Cauliflower
- Mushrooms
- Green Beans
- Bell Pepper
- Asparagus
- Peas
- Corn
Other ingredients you could also consider including in the easy recipe are pesto and dried or fresh herbs such as Italian seasoning, oregano, thyme, red pepper flakes or fresh basil leaves.
You could also use vegan tortellini, add in white beans or cannellini beans and stir through coconut milk to create a creamy soup that’s completely plant based.
You can each bowl of soup topped with parmesan cheese or nutritional yeast for added flavor if you like, or with a side of crusty bread or garlic bread for the ultimate comfort food meal for the colder months time of year.
As you’ll see, the vegetable tortellini soup recipe comes together really quickly, you can have dinner on the table in under 20 minutes, which is especially perfect for busy weeknights.
This is a great meal to turn to when you have little to no food in the house, as you can make it with the help of fresh tortellini or frozen tortellini which you can always keep in your freezer and whatever vegetables you like.
Vegetarian Tortellini Soup Recipe
- 1 Onion, peeled and diced
- 2-3 Garlic Cloves, peeled and diced
- 1-2 Zucchini, chopped
- 4 Cups Vegetable Stock or Vegetable Broth
- 500g/1.1lb Vegetarian Tortellini Pasta
- 1-2 Cups Spinach, rinsed
- Pinch of Salt & Black Pepper, to taste
- Oil or Butter, for cooking
- Heat oil or butter in a large pot over medium heat.
- When hot, add the chopped onion and garlic.
- Cook until starting to soften and then add the zucchini and salt and pepper to taste.
- Brown the zucchini slightly, adding more oil or butter, if needed.
- Pour over the vegetable stock and bring up to the boil.
- Once the vegetables are almost cooked to your liking add in the tortellini and spinach, cooking the tortellini according to package instructions.
- Cook until the tortellini is cooked and spinach has wilted, about 5 to 10 minutes depending on the tortellini you’re using.
- Serve the easy tortellini soup recipe immediately and store any cooled leftovers in an airtight container.
