A Week Of Veggies For Kids – 30 Days Of Vegetables For Kids – Week 1
The first week of the challenge 30 Days Of Vegetables For Kids is done and I’ll show you a week of veggies for kids:
Day 1 – we started with a veggie feast! Corn on the cob with a beetroot coleslaw and fried eggs on toast.
Day 2 – A pre dinner veggie platter featuring a rainbow of different vegetables. A veggie platter to snack on in the lead up to dinner is a great way to ensure more veggies are eaten. And who can resist a veggie platter like this?!
Day 3 – Starting the day with veggies gets the day off to a great start. Avocado on toast features heavily on our regular breakfast menu and on this particular morning I added sliced cucumber on the side for fun.
Day 3 – For lunch the green theme was continued with spaghetti, broccoli and spinach!
Day 4 – This veggie filled Easy Lunch Box included green beans, tomatoes, blueberries, peaches and an avocado sandwich. (Where to find EasyLunchBoxes.)
Day 5 – Kids love pretending that asparagus spears are actual spears and having imaginary battles while consuming the healthy vegetable! Ahhh I love their imagination!
Day 6 – For fun we drank our veggies! This is a recipe I’ve shared (but hadn’t made in a while) – Minty Chocolate Green Smoothie.
Day 7 – We ended week 1 with a GIANT salad including: Spinach, Tomatoes, Avocado and Strawberries. We’re loving strawberry salads at the moment and have been experimenting with all kinds of flavour combinations. This one is delicious!
