Lemon Curd Recipe
This Lemon Curd Recipe is so full of vibrant, luscious lemony flavour that you’ll be smiling from ear to ear! Whenever we go to England on holiday, there is an AMAZING Lemon Curd Yoghurt that we enjoy every time. I have been saying for ages that the only way we can recreate the flavour back home in Australia is to make Lemon Curd ourselves. So that is the task I set myself recently and I’ve been experimenting, getting it just right to share with you. Needless to say, my favourite use for this recipe is mixed through plain natural yoghurt, though there are heaps more recipes using lemon curd, that I share below. To make lemon curd, you simply beat the eggs and sugar together, stir through the butter, lemon juice and lemon zest and then cook it over low heat. It may seem like nothing is happening at first as the heat is so low. Do not be tempted to raise the heat as you risk scrambling your eggs! Just be patient and slowly your liquid will thicken to become a luscious lemon curd, as you’ll see in the video tutorial down below.Lemon Curd Recipe
- 3 Eggs
- 1/3-1/2 Cup Sugar
- 2 Fresh Lemons
- 50g Unsalted Butter
- Crack the eggs into a small saucepan.
- Add in the sugar.
- Whisk to combine the eggs and sugar together, until smooth.
- Using a microplane grater, add the lemon zest and squeeze the fresh lemon juice over a sieve or fine mesh strainer to catch any pips, then whisk through.
- Chop the butter into small cubes and add into the lemon mixture.
- Place the small pan over medium heat.
- Whisk continuously while the curd cooks, until the butter has melted and the curd has thickened.
- Remove from the heat and allow to cool to room temperature.
- You can check that the curd is done by placing a spoon into the curd, removing it and running your finger along the back of a spoon. The curd should hold it’s place when thickened.
- Once the curd has cooled, move to a jar or serving dish, store in the fridge in an airtight container and enjoy within a week.
- Mix it through plain natural yoghurt for a luscious homemade lemon curd yoghurt
- Top a pavlova or a couple of meringues
