7 Low Carb Summer Dinner Recipes
A little while back I shared a week of low carb, keto diet dinner ideas. In case you missed it, here’s the video:
Today I’m sharing the summer edition of dinner ideas and may just make this a trend. Sharing my favourite, seasonal low carb, ketogenic friendly inspirations. (And here’s a full 7 day Keto Summer Plan.)
I’m well aware that the seasons here in Australia are the opposite of those of you in the northern hemisphere, so make sure that you pin/bookmark/save this for inspiration when your warmer weather strikes. Of course these meals can be enjoyed throughout the year. I just favour them for the simplicity and little cooking involved on a super hot day!
I often find during summer that I’m just not very hungry when it comes to dinner time and a light meal is what I feel like. Feel free to adapt the recipes to suit your hunger levels, adding more ingredients to satisfy.

Onto the dinner ideas – here we go:
1. Chicken Cups
Fill lettuce cups with leftover roast chicken, avocado plus your choice of other vegetables and dressing/sauce. My favourites are sour cream, mayo or avocado oil.
You’ll find that thinking ahead an roasting a chicken on cooler days to see you through warmer days is a smart strategy. Prevents heating an already hot house with even more heat from the oven.
2. Smoked Salmon Salad
Start with a bed of greens and top them with smoked salmon pieces and your choice of other ingredients. I like to keep it simple and only mix through a couple of pieces of crumbled feta.
You can drizzle over dressing for extra fat and finish off the salad with a couple of shakes of salt.
3. Summer Dinner Platter
Create a plate full of low carb, keto friendly ingredients to construct a summer dinner platter.
My favourites include:
- Egg Salad
- Hard Boiled Eggs
- Devilled Eggs
- Vegetable Sticks
- Feta
- Salami
- Cheese
- Avocado
4. Silverside/Corned Beef Salad
You could of course use any leftover roast or boiled meat in place of silverside/corned beef. Combine your meat with your choice of vegetables and add a dressing packed full of healthy fats.

5. Tuna Salad Bowl
Start with a bed of greens (lettuce/spinach etc.) and add a small tin of tuna and your choice of dressing – mayo/sour cream. You can also mix through avocado, celery or your vegetables of choice to make a custom tuna salad bowl which is one of the easiest Low Carb Summer Dinner Recipes.
6. Leftovers
This may seem strange, but I can happily eat a number of my favourite dishes straight from the fridge, without reheating them. (Just be sure the food is fresh and doesn’t need to be heated for health and safety purposes!)
One of those dishes is egg roll in a bowl. It’s delish the next day and is the perfect dinner on a warm summer’s evening.
7. Big Green Salad
Simply combine together your favourite green ingredients. For example – lettuce, spinach, avocado, cucumber and celery.
Top with feta is you like and your favourite dressing before enjoying your refreshing big green salad.
