Seaweed Cucumber Stars – Fussy Eater Snack Inspiration

Mid-Morning and Mid-Afternoon, I like to experiment with trying new foods and flavours for my fussy eater’s snacks. Cucumber is a food that Mr 3 DOES eat, so I thought I’d incorporate, well, hide, a new food which is full of nutritional goodness – Seaweed!

To put together the Seaweed Cucumber Stars, firstly you’ll need to slice your cucumber into flat squares or rectangles, ready to be cut into shape.

Next, you cut the shapes out of the cucumber slices. I used a mini star cookie cutter, but you could use any shape you have on hand.

I used packaged seaweed that I found in the International aisle of my local supermarket. It comes in rectangular sheets that are meant to be used to roll up sushi! To cover the cucumber with seaweed, tear tiny pieces of seaweed off of the sheet and press it into one of the cucumber stars.

Next, simply sandwich the two slices together – and you have your cucumber sandwich ready for your fussy eater’s snack!

The first time I presented this to Mr 3, and he did take a couple of bites before declining the remainder of the bowl with a polite “No Thank You!”. Mr 1 – who LOVES Tuna Hand Rolls, (which are rolled in Seaweed) finished them off for him!
