Now that Mr 4 is open to enjoying more and more foods, it’s inspired me to get even more creative with the foods I offer him. With him openly eating more and more vegetables, I’m finding fun ways to incorporate his new favorite flavors into some old favorites – like this little gem I came up with – Banana & Sweet Potato Treat.
They look like little lollies/sweets and the boys can’t get enough of them!
To make the Banana & Sweet Potato Treat, you’ll need a banana and a little mashed sweet potato.
First cut the banana in half lengthways, then spread one of the banana halves with about a teaspoon of sweet potato mash, or more depending on the size of your banana – mine were on the small side.
Sandwich the two pieces together and then carefully cut into pieces. Serve to the kids and maybe sneak one or two pieces yourself – they are just so sweet and delicious!
While I had the sweet potato mash, I cooked a portion into Sweet Potato French Toast – a renewed family favorite.
I put the two sweet potato dishes together in a sweet potato bento lunch box, along with 3 cucumber stars. Mr 4 loved the Sweet Potato & Banana Treat so much that he insisted they also go in his lunch box for kinder the following day!
