Lemon Chia Pudding
If you’re a lemon fan then you’re going to LOVE this Lemon Chia Pudding Recipe. I enjoy this Lemon Chia Pudding most days, sometimes even more than once a day, whenever I have homemade lemon curd to hand.
Chia Puddings are so much fun to prepare. It’s simply a matter of stirring Chia Seeds into a couple of other nourishing ingredients and after a few hours in the fridge you have a creamy pudding to indulge in.
Since there’s homemade lemon curd in this recipe, I love getting little speckles of lemon zest along with the chia bubbles, makes for a wonderful texture.
To make this recipe you need lemon curd. Now you could use store bought lemon curd, but it’s really easy to make your own Homemade Lemon Curd. I shared the recipe a little while back, as a refresher, here is the video:
Mixing chia seeds through lemon and yoghurt in this way sort of reminds me of a lemon poppyseed dessert.

Lemon Chia Pudding Recipe
- 1 Tablespoon Lemon Curd
- 1 Tablespoon Chia Seeds
- 1/2 Cup Yogurt
- Optional Honey, Maple Syrup or Sugar, to taste
- Place the lemon curd into a bowl.
- Add in the chia seeds and yogurt, stir to combine. Taste and add honey, maple syrup or sugar to taste if you’d like the pudding to be sweeter.
- Serve straight away or pop into the fridge for a few hours or overnight to thicken.
You’ll love the tart lemony-ness (is there such a word) of this dish, which you could enjoy for breakfast, as a snack or even for dessert!
