Strawberry Chia Pudding
Strawberries are EVERYWHERE at the moment and SO cheap, so we’ve been enjoying them by the bowlful and they have been finding their way into all sorts of yummy recipes, like this strawberry chia pudding.
My preference is to blend the pudding, as the below recipe suggests, but feel free to simply mix the ingredients together in a bowl or mason jar and skip the blending process.
I keep my pudding simple and without any further sweetener as the yoghurt and strawberries are sweet enough. If you want yours a little sweeter, then add a teaspoon or so of your sweetener of choice – maple syrup or raw honey would be amazing!
Strawberry Chia Pudding Recipe
- 1/2 Cup Strawberries
- 1/2 Cup Vanilla Yoghurt
- 1/2 Cup Milk
- 1/4 Cup Chia Seeds
- Place all of the ingredients into a blender and blend until smooth.
- Stop the blender from time to time to carefully scrape down the edges.
- Once blended to your liking, pour the pudding into a bowl or mason jar and refrigerate for at least a few hours, or overnight, to thicken.
- Serve as is or top with more strawberries and a final sprinkling of chia seeds.
