Keto Truffles – Low Carb Chocolate Truffles – Easy Homemade Ketogenic Diet Friendly Low Carb Chocolate Truffles – Fat Bombs – Recipe & Video Tutorial.
These Keto Truffles are so incredibly easy to make and they taste so decadent and so richly chocolatey that you wouldn’t for a moment believe they are low carb!
In the name of research (and greeeed!) I’ve been making these the past couple of weeks to get the recipe just right and perfecting them with each attempt.
The final result is sensational (if I do say so myself) and will be a staple sweet well beyond the holiday period.
Regarding the chocolate, use the darkest chocolate you can get your hands on. The higher the % the lower the sugar/carb content. (And the healthier it is for you.)
I use Lindt 90% Dark Chocolate in this recipe and you can add stevia or your sweetener of choice to up the sweetness level.
I choose to use salted butter to bring a cultured, slightly salty taste to the truffles. Feel free to use unsalted butter if you prefer.
How To Make Low Carb Chocolate Truffles
Start by gathering your ingredients – cream, Lindt 90% Dark Chocolate, stevia and butter.
Next, pop the cream into a small saucepan and gently bring it up to a simmer.
Once the cream is simmering, remove from the heat and quickly add the chocolate.
Add the butter and Stevia.
Then, stir the mixture thoroughly to melt the chocolate and butter.
Once mixed, taste to check it’s sweet enough. If not, add a little more stevia and stir to dissolve.
Place into the fridge to cool for a few hours, until solid enough to roll into balls.
Once thickened, remove from the fridge and, using a teaspoon per truffle, roll into balls.
You can enjoy the truffles as they are or dipped in chocolate, cocoa powder or shredded coconut.
Keto Truffles Recipe
- 1/2 Cup Cream
- 100g Chocolate (I used 90% Lindt)
- 1-2 Tablespoons Sweetener of Choice, or more to taste (I used Stevia)
- 1 Tablespoon Butter (I used salted to add flavour)
- Pour the cream into a small saucepan.
- Bring the cream up to a simmer over low heat.
- Remove from the heat and quickly add the chocolate, sweetener and butter.
- Stir quickly and gently to melt the chocolate and butter and help the sweetener dissolve.
- Taste a tiny amount to check it’s sweet enough to your liking, adding more sweetener and stirring it needs it.
- Allow to cool then refrigerate for a few hours until thickened and the mixture can easily be rolled into balls.
- Once the truffles mixture has thickened, remove from the fridge and roll into balls, using a teaspoon of the mixture per ball.
- You could leave the balls as is or dip into cacao, coconut or more melted chocolate.
- Keep refrigerated.
