Parmesan Chicken Nuggets
I’d been craving chicken nuggets for a while and googled for low carb chicken nugget inspiration. I discovered that popular crumbing of choice was crumbed pork rinds (I don’t eat pork) and parmesan.
I read a couple of recipes and decided to keep it simple by whisking together a batter of parmesan and eggs for dipping my chicken nuggets into.
My chicken piece of choice for nuggets is the thigh. I find that thighs results in juicy, flavourful nuggets, way more so than lean chicken breasts do.
As for dipping sauce, I like to smother my chicken nuggets in sour cream. Feel free to enjoy your low carb dipping sauce of choice – tomato sauce and even smashed avocado would be delicious!
Parmesan Chicken Nuggets Recipe – Low Carb, Keto Diet
- 500g/1lb Chicken Thighs
- 2 Eggs
- 1/2 Cup Grated Parmesan
- Salt & Pepper/Seasoning to taste
- Coconut Oil/Butter, for frying
- Chop the chicken into bite sized pieces.
- In a bowl, whisk together the eggs, parmesan and your seasoning of choice to create the dipping batter.
- Dip the chicken nuggets into the batter and place onto a plate.
- Heat a little coconut oil/butter in a frying pan.
- When hot, carefully place the prepared chicken into the frying pan.
- Fry in batches if your pan is not big enough to easily hold all of the chicken nuggets.
- Cook until golden, cooked through and crispy on both sides.
- Serve with your choice of low carb dipping sauce.
