Rib Ragu Recipe – Low Carb Keto Diet Winter Meals – inspired by the hearty Nigel Slater recipe and made into a healthy Ketogenic Diet friendly low carb comfort food.

This is one of those recipes I stumbled upon that looked AMAZING and was easy to convert to a low carb friendly version.
The meat just falls off the bones and is perfect over a bowl of cauliflower mash. (I’ve shared both a garlic and cheesy variety for you to choose from) Or, you could enjoy the rib ragu with zucchini noodles made with a spiralizer.
This recipe is the perfect low carb winter meal. A hearty and warming bowl full of comfort.
Rib Ragu Recipe
- 3-4 Garlic Cloves, peeled and diced
- 1 Onion, peeled and diced
- Beef Ribs
- Water/Stock
- Salt & Pepper, to taste
- Coconut oil, for cooking
- Heat a little coconut oil in a large saucepan.
- When hot, add the chopped garlic and onion.
- Cook over medium heat, until slightly softened and translucent.
- Add the beef ribs and cook, in batches, until they are all browned.
- Once all the ribs have browned, pour over water or stock to cover and add salt/pepper or seasoning to taste.
- Bring up to the boil, reduce the heat and simmer over low heat for 3 hours.
- Once cooked, remove the meat from the bones.
- Serve over cauliflower mash or zucchini noodles.
