Scrambled Eggs With Tomatoes
I love easy breakfasts like this scrambled eggs with tomatoes dish. The simple flavors work together so well, that it’s sure to be an egg dish that you go back to time and time again as quick option for your first meal of the day.
Use as much or as little fresh tomatoes, onions and garlic in the easy meal as you like, as their carb content is on the higher end for vegetables. Choose from Roma tomatoes, cherry tomatoes or any other tomato variety in the tomato mixture.
If you’re counting macros, then allocate vegetables according to how many carbs you want to enjoy with your scrambled eggs.
I’ve been experimenting with intermittent fasting lately. (And loving it!) So, I’ve been making sure that I get all my nutrients within my eating window and meals like this are perfect. Loaded with all my macros and tons of nutrients from the variety of vegetables.
You can also add on your choice of seasonings and extra simple or fresh ingredients including a teaspoon sesame oil or soy sauce, chopped green onion, sea salt, black pepper, white pepper, fresh herbs or chopped red or green bell peppers.
It’s one of our favorite meals any time of the day – from a hearty breakfast to a super quick and easy option that’s always welcome on the dinner table too.
Scrambled Eggs With Tomatoes Recipe
- Chopped Onion
- Chopped Garlic
- Chopped Tomatoes
- 2-3 Eggs, per person
- 1-2 Tablespoons Cream, per person
- Salt & Pepper, to taste
- Butter, Olive Oil or Coconut Oil, for frying
- Heat a little oil or butter in a large frying pan or nonstick skillet on the stove top over medium heat to high heat.
- When hot, add the chopped onion and garlic, adding more butter or coconut oil as needed.
- Cook until starting to soften and then add the chopped tomatoes, salt & pepper to taste.
- Meanwhile, whisk the eggs and cream together in a small bowl, until smooth, you can also add in a pinch of salt, pepper or a little bit of any other seasoning you’d like.
- Once the vegetables have cooked to your liking, pour over the beaten eggs.
- Scramble the uncooked egg mixture until fluffy and cooked to your liking, then serve and enjoy.
- You could top the finished eggs with your cheese of choice from feta, parmesan or grated cheese.
