I love easy breakfasts like this. The simple flavours work together so well, that it’s sure to be a breakfast you go back to time and time again.

Use as much or as little tomatoes, onions and garlic as you like as their carb content is on the higher end for vegetables. If you’re counting macros, then allocate vegetables according to how many carbs you want to enjoy with your scrambled eggs.

I’ve been experimenting with intermittent fasting lately. (And loving it!) So, I’ve been making sure that I get all my nutrients within my eating window and meals like this are perfect. Loaded with all my macros and tons of nutrients from the variety of vegetables.

Scrambled Eggs With Tomatoes Recipe

  • Chopped Onion
  • Chopped Garlic
  • Chopped Tomatoes
  • 2-3 Eggs, per person
  • 1-2 Tablespoons Cream, per person
  • Salt & Pepper, to taste
  • Butter or Coconut Oil, for frying
  1. Heat butter or coconut oil in a large frying pan.
  2. When hot, add the chopped onion and garlic, adding more butter or coconut oil as needed.
  3. Cook until starting to soften and then add the chopped tomatoes, salt & pepper to taste.
  4. Meanwhile, whisk the eggs and cream together until smooth.
  5. Once the vegetables have cooked to your liking, pour over the whisked eggs.
  6. Scramble the eggs until cooked, serve and enjoy.
  7. You could top the finished eggs with your cheese of choice from feta, parmesan or grated cheese.

  • Chopped Tomatoes

  • 1-2 Tablespoons Cream, per person
  • Salt & Pepper, to taste
