I have NO idea why it took me a year into my Keto Diet journey to try creamed spinach. It was the result of having a GIANT bag of spinach in my fridge that needed to be used and a curiosity to see what it would be like cooked in heaps of butter and mascarpone.

The results? A creamy, dreamy spinach dish that I’ve made countless times since my first experimentation. I really don’t measure the quantities, just add as much spinach as I feel like for myself and my Husband, keep adding more butter as it’s absorbed and then a generous couple of dollops of Mascarpone cheese. Too easy!

You can enjoy this keto creamed spinach as a savoury side dish with a main meal. But, lately I’ve been making it and having it with fried eggs for breakfast and it’s seriously the BEST way to start the day!

Keto Creamed Spinach Recipe

  • Spinach
  • Mascarpone
  • Butter or Coconut Oil, for frying
  • Salt & Pepper, to taste
  1. Melt butter or coconut oil in a large frying pan.
  2. When hot, add the spinach and cook until wilted, adding more butter/coconut oil as it gets absorbed.
  3. Once cooked, add a few dollops of mascarpone and salt and pepper to taste.
  4. Cook until thickened and creamed.
  5. Serve and enjoy!
