Cheesy Broccoli Rice Recipe
Cheesy Broccoli Rice is my latest Keto experimental success. Broccoli rice is just sooooo easy to make that you’ll be hooked on the tasty rice alternative.
You simply grate a head of broccoli – including the stalk – and then fry it up with your low carb friendly ingredients of choice.
In this instance, I’ve gone with a super cheesy sauce that turns the broccoli into a can’t get enough of comfort food dish. Almost like mac and cheese – but with virtually no carbs.
Cream cheese works wonders to magically thicken the cheese sauce in no time, working well with the cream and cheese.
The volumes of cream cheese, cream and cheese in the listed recipe are the bare minimum needed for your cheesy broccoli rice.
Feel free to add more of any or all ingredients to create an extra creamy and overflowing cheesy dish.
Keto Cheesy Broccoli Rice Recipe
- 1 Head of Broccoli
- 2 Tablespoons Cream Cheese
- 2 Tablespoons Cream
- 1/2 Cup Grated Cheese
- Butter or Coconut Oil, for frying
- Salt & Pepper to taste
- Using a box grater, grate the broccoli and stalk into rice.
- Heat butter or coconut oil in a large frying pan.
- When hot, add the broccoli rice, salt and pepper to taste.
- Cook until softened, adding more butter or coconut oil.
- Once the broccoli is cooked, add the cream cheese, cream and grated cheese.
- Cook until the sauce has thickened and cheese has melted.
- Remove to a bowl and enjoy.
