Keto Cauliflower Mash With Cream Cheese
There are so many delicious Keto Cauliflower Mash variations and this is my latest experimentation – mixing cream cheese into mashed cauliflower for a creamy and cheesy low carb side dish.
This cauliflower mash is perfect with Corned Beef Silverside, sausages or a Sunday roast.
Keto Cauliflower Mash With Cream Cheese
- 1 Head of Cauliflower
- 2-3 Garlic Cloves
- 2-3 Tablespoons Cream Cheese
- 2-3 Tablespoons Butter
- Milk or Cream (Optional)
- Chop the cauliflower into florets and peel the garlic cloves, but leave them whole.
- Place the cauliflower and garlic in a saucepan.
- Cover with water, place over high heat and bring up to the boil.
- Once boiling, reduce to a simmer and cook for about 15 to 20 minutes or until the cauliflower is easily mashable.
- Remove from the heat, drain the liquid and then mash the cauliflower, along with the cream cheese and butter.
- Mash until smooth, adding milk or cream if needed for an extra creamy texture.
- Serve as a side with Corned Beef, Sausages or your Keto meal of choice.
