I’ve always been a fan of Moussaka – but no so much a fan of the many steps involved in creating an authentic one. Then I found a Hob To Table Moussaka recipe on the BBC Good Food Website, gave it a try and was amazed at how similar it was, yet with few steps and ingredients. (See the recipe here.)
The dish really tastes like a Moussaka – you get the rich meaty sauce, loaded with eggplant and the crumbled feta tastes like the traditional greek yogurt flavoured layer.
But – of course it’s not an actual, true authentic moussaka, though it’s easy to almost believe it is.

I’ve adapted and simplified the recipe further. The original recipe calls for a jar a chargrilled eggplant. And, despite searching every grocery store I could find here in Ireland, I just couldn’t find a jar. So, I used fresh eggplant instead and it turned out perfectly.
You can feel free to adapt your Moussaka to include onion, garlic, leek or any other vegetable. I was after keeping the carb count down so stuck to just eggplant and chopped tomatoes. Also, I used beef mince because that’s what I had and it’s easier to get hold of. You can use traditional lamb mince instead.

Easy Moussaka Recipe
- 500g/1.1lbs Beef or Lamb Mince
- 1 Eggplant
- 1 Can or Carton Chopped Tomatoes
- 200g/7 ounces Feta
- Heat a frying pan and add butter, coconut or olive oil.
- When hot, add the mince.
- Cook the mince until browned.
- While the mince is browning, chop the eggplant into bite sized pieces.
- Once the meat has browned, add the eggplant and cook until starting to brown too.
- Pour over the chopped tomatoes and simmer until the meat and eggplant is cooked through and the sauce reduced.
- You can add water or stock if it needs more liquid before the dish is ready.
- Remove from the heat and crumble over the feta.
- Serve and enjoy.

This is such a wonderful dinner dish to enjoy if you’re a fan of the flavours of Moussaka but want an easy way to enjoy the dish without much hassle. (Or washing up!)

- 500g/1.1lbs Beef or Lamb Mince
- 1 Eggplant

- 200g/7 ounces Feta
Instructions
- Heat a frying pan and add butter, coconut or olive oil.
- When hot, add the mince.
- Cook the mince until browned.
- While the mince is browning, chop the eggplant into bite sized pieces.

- Pour over the chopped tomatoes and simmer until the meat and eggplant is cooked through and the sauce reduced.
