Easy Sausage Casserole
Dinner doesn’t come much easier than this one pot wonder. With just your favourite sausages, vegetables and pasta you can enjoy this easy sausage casserole to suit your families tastes. (Here are more keto comfort foods.)
If you’re following a low carb diet like the Keto Diet, then look for the lowest carb sausages and pasta sauce that you can find.
If not, then you can carb up the casserole by adding chopped potatoes and carrots for the duration of cooking or a drained can of butter or cannelini beans for the last few minutes of cooking.
I’ve used a leek, because I find it goes well with sausages. But, you can feel free to use onion or garlic instead.
I find that the sausages bring wonderful seasoning and flavour to the casserole, if you’d like you could also add salt, pepper or your seasoning of choice as well.
Easy Sausage Casserole Recipe
- 1 Leek
- 500g/1.1lbs Sausages
- 1 Head of Broccoli
- 1 Jar of Pasta Sauce
- Heat butter or coconut oil in a saucepan.
- Meanwhile, chop the leek, sausages and broccoli into bite sized pieces.
- Once saucepan is hot, add the leek and cook until starting to soften.
- Add the chopped sausages and cook until starting to brown.
- Add the broccoli and then the jar of pasta sauce.
- Stir to combine and add water to cover.
- Bring up to the boil, reduce the heat and simmer for 20 minutes or until cooked through and the sauce has reduced.
- Serve and enjoy.
This is such an easy one pot dish that requires very little effort yet results in a comforting dish the whole family enjoys.
