To me, superfoods are wonderfully nourishing foods that pack a nutritious punch. When you’re feeling like a breakfast that’s healthy in every single way then a superfood bowl is perfect. 

 

I tend to start my day with little to no carbs, allowing for plenty of wiggle room through the day. So, this bowl also happens to be low carb and keto diet friendly. 

Superfood Breakfast Ingredients

Ingredients for superfood breakfast bowls

Here are some ideas to include in your Superfood Breakfast Bowl. 

  • Avocado
  • Spinach, Kale or other green leafy vegetables
  • Zucchini
  • Leek, Onion, Garlic
  • Nuts – walnuts, almonds
  • Eggs
  • Chia Seeds
  • Smoked Salmon 
  • Butter, Coconut Oil
  • Full Fat Dairy – cream, sour cream, yoghurt

Superfood Bowl For Breakfast – Recipe

  • Leek, washed and chopped
  • Zucchini, washed and chopped
  • Eggs
  • Cream
  • Avocado
  • Smoked Salmon
  • Butter or coconut oil, for frying 
  1. Heat butter or coconut oil in a frying pan.
  2. When hot, cook the leek and zucchini until softened and golden to your liking. 
  3. Remove to a bowl, cover with a lid to keep cool and then cook your eggs. 
  4. Whisk eggs together with cream until smooth. 
  5. Heat more butter or coconut oil in a frying pan and cook the eggs, scrambling until they are done to your liking. 
  6. Move to the bowl with the zucchini and leek.
  7. Complete the superfood breakfast bowl with a portion of avocado and smoked salmon.
