Lemon Ricotta Mousse Recipe – Easy Cheesecake like dessert that’s low carb, keto diet friendly and sugar free too.
Lemon Ricotta Mousse Recipe
Lemon and ricotta are a flavour match made in culinary heaven. The creamy ricotta cheese and lemon work together with whipped cream to create the ultimate summer dessert. (This Lemon Ricotta Cake is another delicious example.)
I love enjoying sweet treats that are also nourishing and this mousse is high in protein thanks to the nutritious ricotta and healthy fats from the ricotta and whipped cream.
How To Make Low Carb Lemon Ricotta Dessert
Start by whisking the cream until you have perfectly whipped cream. You can use heavy, double, whipping or whatever cream you’re able to whisk to white peaks.
Next, whisk in the ricotta cheese and stevia until both are well mixed through. You’re welcome to use your sweetener of choice instead and as much or as little as you like.
I find 2 tablespoons to be the perfect amount, but then I like a zingy lemon flavour. If you’d prefer yours to be sweeter then add a quarter of a cup. (Or more!)
Finally, fold through grated lemon zest and squeeze the lemon over a sieve to catch any pips. Depending how many carbs you’d like to allocate, use half or the whole lemon.
You can enjoy your creamy lemon dessert straight away or it really does benefit from a few hours in the fridge to thicken.
