Mediterranean Chickpea Salad Recipe
Since transitioning to a vegetarian diet (you can read about my first month here) I’ve found a whole world of new ingredients has opened up to me.
For example, I rarely had canned chickpeas (or garbanzo beans) in the past and in the past month I’ve enjoyed them in a number of different ways.
This 6 ingredient Mediterranean chickpea salad is my favorite way to enjoy chickpeas – so far. Simply combine together your favorite Mediterranean ingredients for a light and perfectly balanced delicious salad experience.
Nutritious Salad Ingredients
As with a lot of my recipes, I like to share a core recipe which is really easy and then invite you to mix and match and include your ingredients of choice to create a dish to suit your tastes.
Here are some ideas for fresh vegetables and simple ingredients to include in your easy recipe:
- Red Tomatoes – you could include a variety of different sized and colored fresh tomatoes
- Peppers – red bell pepper or orange would work well
- Cucumber – such as English cucumber or Persian Cucumbers
- Avocado
- Olives – choose from kalamata olives, black olives or green olives
- Red Onion, Yellow Onion or Green Onions
- Feta Cheese or Goat Cheese (or skip if you’d prefer to make your chickpea salad vegan)
- Garlic – powder or crushed
- Spinach or another leafy vegetable
- Fresh Herbs – oregano, fresh parsley or fresh mint would work well
- Salt, Black Pepper and any other seasoning, to taste
- Red Wine Vinegar
- Lemon Juice and Lemon Zest
- Extra-Virgin Olive Oil
- Salad Dressing of choice
You can meal prep the fresh ingredients in a large bowl then move to a mason jar to grab and go for a delicious lunch or light meal or serve in pita bread for a great way to enjoy the healthy salad.
Below is my personal favorite simple salad combination – using just 6 ingredients. I’d suggest using the recipe as a starting point and enjoy your Mediterranean Chickpea Salad anyhow you like.
Easy Mediterranean Chickpea Salad Recipe
- 1 Tin of Chickpeas
- Chopped Cherry Tomatoes
- Chopped Red Onion
- Chopped Feta Cheese
- 1/2 Lemon
- 1-2 Tablespoons Extra Virgin Olive Oil
- Drain and rinse the chickpeas and then place into a bowl.
- Top with the tomato, onion and feta.
- Drizzle the lemon, over a sieve to catch any pips and then pour over the extra virgin olive oil.
- Toss to combine and add any other salad ingredients, seasoning or herb you like.
- Enjoy straight away or store in the fridge for a few hours to allow the flavor to develop and store any leftover salad in an airtight container.
