Simple Carrot Salad Recipe

This simple carrot salad is creamy, cheesy and so easy to prepare. There are only 3 ingredients in the basic recipe, and then loads of variations, as you’ll see, so you can tailor the salad to your tastes. (And budget!)

The bright orange salad makes an easy side dish that’s always a welcome addition to any picnic, lunch box or dinner table any time of the year.

How To Make A Carrot Salad

To start with, you can use any carrots you like, from regular sized carrots to small, sweet carrots or even rainbow carrots, then you can choose whether to keep your carrots unpeeled or peel them. You can save any carrot peel to use in soups or stocks if you don’t want to waste anything.

Then, you can choose to chop, dice or grate your carrots. Since I’m mixing in grated cheese, I thought I’d stick with the same texture and go for grated carrots.

Grating raw carrots

Use the large holes of your box grater (here are box graters on Amazon), a julienne peeler or a food processor to grate raw carrots until you have enough to fill your salad bowl or dish.

For the creamy dressing, I just opted for sour cream because I feel that it’s the perfect addition of creaminess and tangy flavor to balance with the crunchy carrots. You could swap the sour cream for mayo or Greek yogurt if you’d prefer. Or do a mix of a couple of creamy ingredients.

For the best way to create a vegan recipe, simply use a vegan mayo, dairy free sour cream or yogurt alternative instead.

Add as much sour cream as you’d like and give it a good toss through. Then, for the cheese, add a quarter of a cup at a time, give it a mix and then keep adding more until you’re happy with the amount of cheese in your salad.

Pop the salad into the fridge for a few hours to give the flavors time to mingle and develop. Then, enjoy the great side dish as an easy healthy eating option!

Topping ideas

Here are some ideas for simple ingredients that you can add into your carrot slaw, if you want to go beyond the 3 ingredients in the easy recipe:

  • Sea Salt, Black Pepper & any other seasoning
  • Chopped fresh parsley
  • Cooked chopped onion or green onions
  • Cooked chopped garlic
  • Cooked pasta
  • Sultanas or Raisins
  • Chopped fresh pineapple
  • Apple cider vinegar or white wine vinegar
  • Hard boiled eggs – chopped
  • Feta
  • Goats Cheese
  • Lemon zest or tangy lemon juice, lime juice or orange juice
  • Dijon Mustard
  • Nuts – pine nuts, walnuts, pecan nuts
How to make a shredded carrot salad

Easy Carrot Salad Recipe

  • 3-4 Raw Carrots
  • 1/4 to 1/2 Cup Sour Cream
  • 1/4 to 1/2 Cup Grated Cheese
  1. Peel the carrots and grate them into a salad bowl or dish.
  2. Add 1/4 Cup of sour cream to the shredded carrots and stir through, add the other quarter of a cup, or more, until creamy to your liking.
  3. Add the cheese, a quarter of a cup at a time, mixing after each addition until the salad has as much cheese as you’d like.
  4. Enjoy straight away or move the salad to the fridge for a few hours to allow the flavors to develop, and then enjoy, storing any leftovers in an airtight container in the fridge.
