My newfound love for enjoying porridge/oatmeal for breakfast has seen me experimenting with different grains and flavours to discover different ways to enjoy the hearty, healthy breakfast. (I’ve shared chocolate banana and apple cinnamon oatmeal recipes in the past couple of months.)

My latest discovery is this easy chocolate quinoa porridge recipe. It’s rich and chocolatey and a great way to enjoy quinoa – especially if, like me, you’re new to cooking with quinoa and want to incorporate more of the nourishing ingredient in your diet, but not sure how.

To make quinoa porridge is actually really simple. If you’re used to enjoying regular oatmeal with oats for breakfast, then making quinoa is a similar method.

The only major differences are that it takes a lot longer to cook and the quinoa needs a quick rinse before cooking.

All you have to do is place the quinoa into a sieve and rinse well with water. This gives them a clean and ensures that any bitter film is washed off.

Then, combine the quinoa in a saucepan with milk, water, cacao or cocoa powder and maple syrup, or your sweetener of choice. The porridge is then popped onto a medium heat on the stove top, brought up to a simmer and then cooked until thickened to your liking.

It may look extra watery initially, but you’ll see that in time all the liquid is absorbed and you’ll be left with a beautifully thickened porridge. Mine takes about 20 to 25 minutes to being perfectly cooked.

You can then enjoy your chocolate quinoa porridge as is or top with berries, banana, more maple syrup, yoghurt or even chopped chocolate for an extremely indulgent, chocolatey porridge experience.

The below recipe makes enough for one bowl of porridge. I usually double it for myself and my Husband and go light on the maple syrup when cooking as he likes his chocolate darker than I do. I then drizzle a bit more maple syrup over my bowl and he usually breaks a row of dark chocolate over his to make his a bit darker.
