Gluten Free Chocolate Chip Muffins
Despite no longer following a low carb diet, I find myself baking predominantly gluten free sweet treats. The other week I shared gluten free banana bread and today is all about sweet and healthy gluten free chocolate chip muffins.
These muffins are easy to prepare and the perfect afternoon pick me up that my whole family adores.
How To Make Gluten Free Muffins With Coconut Flour
If you’ve never baked with coconut flour before, then you’ll quickly discover that it’s an incredibly absorbent ingredient. You only need a half a cup of the nourishing flour to create perfectly light, moist muffins.
To actually make the muffins, you simply combine the dry ingredients together in a bowl. Then, melt the butter and mix in the remaining wet ingredients.
It’s then just a matter of mixing the wet into the dry ingredients and folding through chocolate chips until you have a smooth muffin batter.
If you’d like to make low carb chocolate chip muffins then simply swap the sugar for stevia, use almond milk or another low carb milk and be sure to use low carb chocolate chips. Or, you could break up a block of dark chocolate into chips to use in the muffins.
Regarding the chocolate chips, it’s up to you whether you want a light speckling of chocolate, by using half a cup. Or if you want them loaded with chocolate in every corner and go for the full cup.
Whichever way you choose to go, these muffins are light, moist and the perfect gluten free baked treat.
Gluten Free Chocolate Chip Muffins Recipe
- 125g/4.4 ounces Unsalted Butter
- 1/2 Cup Coconut Flour
- 1/2 Cup Coconut Sugar (Or Stevia for low carb muffins)
- 2 teaspoons Gluten Free Baking Powder
- Pinch of Salt
- 1/3 Cup Milk
- 1/3 Cup Cream
- 2 Eggs
- 1/2 teaspoon Vanilla Extract
- 1/2 to 1 Cup Chocolate Chips
- Preheat the oven to 180C/350F and line a 12 hole muffin tin with muffin liners.
- Melt the butter over low heat. Once melted, remove from the heat and cool.
- In a large bowl, mix together the coconut flour, coconut sugar, baking powder and salt.
- Whisk the milk, cream, eggs and vanilla into the melted butter.
- Pour the butter mixture into the flour mixture, stir to combine.
- As the batter is starting to come together, fold through the chocolate chips.
- Mix until you have a smooth muffin batter.
- Drop 1-2 tablespoons of the batter into each muffin cup.
- Place into the preheated oven for 20 to 25 minutes or until golden and done to your liking.
- Remove from the oven, allow to cool and enjoy.
As you can tell, these muffins are incredibly easy to prepare and are the perfect chocolatey sweet treat.
