My kids adore this banana bread with coconut flour with meals or as a sweet treat. The past couple of months I had made this banana bread recipe for them a couple of times and I thought I’d see if I could adapt the recipe to be gluten free. 

As I enjoy baking with coconut flour, that was my flour of choice. The resulting banana bread is moist, tasty and you won’t even believe it’s gluten free. (And, as an update – I’m still making this recipe, exactly as shared, years later!)

As mentioned, I chose to use coconut flour as my gluten free flour of choice. When baking with coconut flour, you only need about a quarter to a third of the recommended flour. 

Because coconut flour is super absorbent, you need to also increase the quantity of eggs to ensure you don’t end up with a dry baked good. 

I chose to use unsalted butter. If you’d prefer to create a dairy free, paleo friendly banana bread then swap in 1/3 of a cup of melted coconut oil instead. 

Be sure to use spotty, extra ripe bananas. They will be easy to mash and perfectly sweet for enjoying in banana bread. 

Regarding the sweetness, I chose to use 1/3 of a cup of coconut sugar. When blended with the sweet bananas, we found it to be perfectly sweet. You may prefer a half a cup (or more) of coconut sugar. Or, feel free to use sugar, maple syrup or your sweetener of choice in this recipe.

How To Make Gluten Free Banana Bread

Start by gathering all of your ingredients, getting out a loaf tin and lining it with well greased baking paper. Also, pop on the oven to preheat to 180C/350F.

Mashing bananas

Get out a large bowl and mash the bananas, using a fork. I often get my kids to help me with this step, they take great satisfactions in mashing the bananas to a gooey bowl full.

Melting butter

Place the butter in a saucepan, move it to the stove top over medium to high heat and cook, stirring often, until completely melted.

Pour the melted butter over the mashed banana and mix well.

Adding sugar, salt and bicarb

Add the bicarb/baking soda, salt, optional cinamon and sugar then stir well to combine.

Whisking eggs and adding vanilla

Crack the eggs into a small bowl and whisk with a fork until smooth, then pour the whisked eggs over the banana mixture, along with the vanilla. Stir until fully incorporated.

Adding coconut flour

Finally, add the coconut flour and mix until you have a banana bread batter.

Move the batter to the prepared loaf tin and flatten the top .

Place into the preheated oven for 45 to 55 minutes or until golden and cooked through.

Allow to cool completely and then enjoy. We love ours topped with cream cheese, mascarpone cheese or my homemade chia jam.

  • 50g Unsalted Butter
  • 1 teaspoon Bicarb/Baking Soda
  • Pinch of Salt
  • 1/2 to 1 teaspoon Ground Cinnamon (Optional) 
  • 1/3 to 1/2 Cup Coconut Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla Extract 
  • 1/2 Cup Coconut Flour 
  1. Preheat the oven to 180C/350F, get out a loaf tin and line it with well greased baking paper. 
  2. In a large bowl, mash the bananas until smooth. 
  3. Melt the butter and then pour it over the mashed bananas. 
  4. Stir through the bicarb/baking soda, salt, (optional) cinnamon and sugar. 
  5. Crack the eggs into a small bowl, whisk until smooth and then mix them through the banana bread mixture. 
  6. Stir through the vanilla, until smooth. 
  7. Add the coconut flour and mix until completely incorporated. 
  8. Pour the banana bread batter into the prepared loaf tin. 
  9. Place into the preheated oven for 45 to 55 minutes or until golden and cooked through. 
  10. Remove from the oven, allow to cool and then cut into slices.
