Blueberry Chia Seed Pudding
This Blueberry Chia Seed Pudding makes a brilliant make ahead sweet treat, snack or breakfast that can be low carb, keto and sugar free friendly too.
The pudding is packed full of immune boosting ingredients:
Blueberries – are an antioxidant superfood (source) that bring beautiful color and flavor to the chia pudding. Use as little or as much berries as you’d like, depending on whether you’d like the pudding to be low carb or not.
Lemon – blueberries and lemon are a flavor match that bring out the best in each other, I like to include the zest and a few squeezes of lemon juice, too.
Chia Seeds – these tiny nutritional powerhouses add essential fiber, omega 3, protein, calcium, zinc and have a host of nutritional benefits. (Source.)
Milk – you can use almond milk, coconut milk or whatever milk you usually include in your diet.
Sweetness – you can also add in sweetener if you’d like a sweeter pudding, I like to blend the pudding, taste and then add in sweetness by the teaspoon depending on how sweet the fruit is.
To actually make the pudding, pop all of the ingredients into a blender and then blend until smooth. Pour the pudding out into a bowl, then place in the fridhe for a few hours or overnight to thicken, then enjoy.

- 1 Cup Almond/Coconut Milk
- 1 Cup Blueberries
- Zest & Juice of 1/2 to 1 Lemon
- 1/4 Cup Chia Seeds
- Sweetener, to taste
- Place all of the ingrdients into a blender.
- Blend until smooth and creamy, taste the pudding and add sweetener, to taste, if needed.
- Pour the pudding into a bowl, then place in the fridge for a few hours or overnight, to thicken.
- Enjoy as is or topped with berries, nuts, more chia seeds or your toppings of choice.
