This lime curd recipe is a tasty way to enjoy a bounty of fresh limes and, as you’ll see, you only need 4 ingredients and it’s so easy to make.
I’ll often keep my eye out at grocery stores for when limes are in abundance, especially so that I can create a batch of mouthwateringly delicious curd to enjoy with all kinds of sweet treats.
The Four Simple Ingredients
Here are the four simple ingredients that you’ll need –
Eggs – whole eggs are used in the easy recipe, so you don’t have to fiddle with separating the egg yolks from the egg whites as is often the case in different recipes for citrus curd.
Sugar or Stevia – To create a low carb, sugar free and keto plan friendly curd, simply use stevia or your sweeteners of choice instead of sugar. You can include as much sugar as you like, depending on your own personal preference for how you like your sweet treats and also to balance much juice you extract from your limes.
Limes – fresh lime juice and lime zest from real limes is included in the recipe as the best way to achieve a flavorful final product. Feel free to use any variety of limes you’d like including popular key limes or even Persian limes.
You can also swap the regular limes for your choice of citrus fruits including using fresh lemons to make a lemon curd recipe or any fresh oranges to create an orange curd.
Butter – I’ve used unsalted butter in the recipe but you can feel free to swap to a dairy free butter alternative if you’d prefer for the delicious lime curd to be dairy free.
Lime Curd Uses
I tend to simply enjoy the traditional curd by the creamy spoon full. But, here are some quick and easy ideas for tasty lime curd uses:
- Mixed through vanilla yogurt or plain Greek yogurt as a healthy snack
- Mix through lightly whipped heavy cream
- As a meringue or pavlova topping with cream and fresh fruit
- As a fruit salad topping
- As a pancake or waffle topping
- As an ice cream topping
- As a cake filling between cake layers or frosting over the top of an angel food cake or cupcakes
- In key lime pie or lemon bars
- To sandwich cookies together
- Spread on fresh scones along with clotted cream
Lime Curd Recipe
- 2 Large Eggs
- 1/4 Cup Sugar, Stevia or your sweetener of choice
- 2 Limes
- 1oz/30g Unsalted Butter
- Start by cracking the eggs into a small saucepan.
- Whisk the sugar or stevia into the egg mixture until fully incorporated.
- Using a microplane grater, grate over the lime zest and then add the juice of the limes over a sieve to catch any pips and whisk through.
- Chop the butter into small cubes and then add into the saucepan.
- Place the saucepan with the lime mixture on the stove top over medium-low heat.
- Whisk continuously until the butter has completely melted and the curd is bubbling and has thickened.
- You can check that the curd is ready by placing a spoon into the curd, removing it and running your finger along the back of a spoon. The curd should hold it’s place when is has properly thickened.
- Once done, remove from the heat and allow to cool completely to room temperature. You can strain curd for a super smooth curd with a glossy finish.
- Then, pour curd into a jar, serving dish or airtight container, store in the fridge and use within a few days.
My own personal preference is to enjoy the lime curd recipe either by the spoon full or mixed through plain Greek yogurt as a healthy and sweet snack. But, you may prefer to enjoy fruit curd recipes in other ways such as the perfect filling for a cake or combined with other sweet desserts.
