This oven baked chicken thighs recipe results in wonderfully crispy skin and tender, juicy chicken thighs within.
I’ve chosen to use chicken thighs with the skin on and bone in for the added flavor of the dark meat and crispy skin, but you can feel free to swap for chicken breasts or boneless skinless chicken thighs if you’d prefer.
I usually make a big batch of the easy recipe and store leftover chicken in an airtight container to enjoy as a grab and go lunch over the following days.
Regarding seasoning, I simply use only paprika and salt for flavor, but you can also add in your seasoning of choice from black pepper, Italian seasoning, onion powder, garlic powder, cayenne pepper, chicken seasoning or fresh herbs.
You could also flavor the simple chicken recipe with simple ingredients like lemon zest or juice, a simple spice rub or even dot garlic cloves among the chicken pieces for fresh garlic flavor.
You could even serve the juicy thighs as a dinner party dish with a tasty selection of side dishes. It’s truly a no fuss dish that doesn’t take a long time to prep and is always a real crowd pleaser.
My entire family always rave about the crispy skin and juicy meat, regularly request the meal and would probably even eat it every night of the week if they could!
We enjoy our tender chicken thighs with rice and corn as sides, but you can feel free to enjoy the easy chicken dinner with any sides that you usually enjoy with a chicken dish.
Crispy Baked Chicken Thighs Recipe
- 1-2kg/2-4lbs Chicken Thighs
- Paprika
- Sea Salt
- Extra Virgin Olive Oil
- Preheat the oven temperature to 200C/400F and get out a baking dish big enough to easily fit all of the chicken in a single layer.
- Place all of the chicken skin side down into the baking dish.
- Shake over paprika, salt and any other seasoning you like, then drizzle over the olive oil, a tablespoon at a time and use the back of the spoon to distribute the oil and seasoning around the chicken.
- Flip the chicken so that it’s skin side up and shake over more seasoning and drizzle of oil, ensuring every corner of chicken is seasoned.
- Flip the chicken once more so that it’s skin side down then place into the preheated oven for 30 minutes.
- Remove from the oven, turn the chicken over so that it’s skin side up and place back into the oven for a final 30 minutes or until the skin is crisp and golden brown to your liking and chicken is cooked through.
- Serve with your choice of sides, store any leftovers in an airtight container in the fridge and enjoy with a couple of days.
