Keto Tuscan Chicken Recipe

This Keto Tuscan Chicken Recipe makes an easy one pan low carb friendly meal that you can enjoy for dinner or meal prep to take for a speedy and flavorful make ahead lunch.

This has been one of my favorite comfort food meals lately, and the whole family can’t get enough of it too. I usually make double so that we can enjoy the flavorful meal as leftovers for days.

You can use boneless skinless chicken breasts or skinless chicken thighs, which are my preference – I just adore tender chicken thighs cooked in the incredible creamy sauce that’s packed full of flavor.

Serve the low carb meal, that’s ready in under 30 minutes total time, with your choice of keto friendly sides of choice including cauliflower rice, chopped broccoli, green beans, zucchini noodles or cabbage noodles.

The Simple Ingredients For The Easy Recipe

The simple recipe includes some of my favorite ingredients, all of which are easy to find at a local grocery store:

Boneless Chicken Thighs – as mentioned, I choose to use juicy chicken thighs in the low carb Tuscan chicken recipe. You can use boneless skinless chicken breast or chicken breasts, if you’d prefer, it just depends on your preference and what’s easy to get hold of at your local supermarket.

Paprika – to add smokiness and the distinctive paprika flavor to the creamy chicken dish.

Onion and Garlic – I’ve included chopped red onions and plenty of chopped fresh garlic, you can also add in garlic powder and onion powder for even more flavor, if you’d like.

Adding sun-dried tomatoes to the creamy tuscan chicken recipe

Sun-Dried Tomatoes – we adore the powerful pop of flavor that sundried tomatoes provides to delicious recipes, you can leave it out if you’re not a tomato fan or swap to chopped tomatoes, cherry tomatoes or even chopped red peppers, if you’d prefer. Just be sure to give the tomatoes a little more cooking time if you’re using fresh veggies rather than sun-dried.

Fresh Spinach – add as much fresh spinach, baby spinach or any other nutritious greens as you’d like to help balance the richness of the dish and add some greens to your plate. You can of course swap for frozen spinach, if you’d prefer, just be sure to thaw and drain it before use.

Heavy Cream – to add richness and incredible creaminess to the low-carb Tuscan chicken cream sauce. You can swap for any cream you like or full fat coconut milk, coconut cream or even cashew cream if you’d prefer to create a dairy free creamy garlic sauce.

Chicken Broth – to add flavor I like to include chicken broth, but you can skip and and use water instead or swap for vegetable stock, bone broth or even white wine, if you include it in your diet.

Parmesan Cheese – to make the creamy parmesan sauce I’ve used a half a cup of parmesan, which you can grate yourself or buy already grated to save you time. You can leave the parmesan out if you’d prefer a dairy free sauce, or swap to nutritional yeast or a dairy free parmesan alternative to be able to enjoy the flavor of parmesan.

More ingredient ideas

Here are some ideas for more keto diet friendly ingredients that you could include that are low in net carbs –

Cream Cheese – add in even more creaminess and richness with a few spoons of cream cheese.

Herbs and Seasoning – add in your choice of herbs and seasoning, to taste. Choose from parsley, red pepper flakes, thyme, fresh basil or Italian seasoning.

Swap the chicken – for any other protein or meat you like, for example making a creamy Tuscan salmon dish or by swapping for a meaty steak that would also be incredible in the creamy flavorful sauce.

The comforting meal with it’s luscious creamy sauce is the perfect main dish to serve as a weeknight meal or even at a special occasion to wow dinner guests with the sublime flavors of the Mediterranean.

How to make creamy Keto Tuscan Chicken Recipe

Keto Tuscan Chicken Recipe

  • 4 Boneless & Skinless Chicken Thighs
  • Paprika
  • 1 Red Onion, peeled and chopped
  • 3-4 Fresh Garlic Cloves, peeled and chopped
  • 3-4 Sun-Dried Tomatoes
  • 1/2 to 1 Cup Spinach
  • 1/2 Cup Heavy Cream
  • 1/2 Cup Chicken Broth
  • 1/2 Cup Parmesan Cheese
  • Salt & Black Pepper, to taste,
  • Coconut Oil or Olive Oil, For Frying
  1. Heat a large frying pan or large skillet on the stove top over medium heat to medium-high heat and add a few teaspoons of coconut oil or olive oil.
  2. While the large pan is heating, season chicken thighs on both sides with salt and pepper, to taste as well as plenty of paprika.
  3. Once hot, move the chicken thighs to the frying pan and cook for 3 to 4 minutes a side, until golden brown but not yet cooked through.
  4. Remove the chicken to a plate once browned, add more oil, if needed, then place the chopped onion and garlic into the hot pan to soften, moving the vegetables around the bottom of the pan to help it all to absorb the chicken flavors and become well mixed with any browned bits.
  5. Once the onion and garlic has softened, add in the sundried tomatoes and spinach, then toss well to combine.
  6. Pour over the heavy cream, chicken broth and parmesan, then bring the garlicky sauce up to the boil.
  7. Once bubbling, add the browned chicken back into the pan, reduce to a simmer and cook for a final 5 to 10 minutes or until the chicken pieces are heated and cooked through. You can add in more parmesan if you’d like a thicker sauce.
  8. Serve the whole dish immediately, with your choice of sides, storing any leftovers in an airtight container and enjoying within a day.
