Creamy Broccoli Salad
This creamy broccoli salad is my go to dish that I make for picnics, potlucks, an easy make ahead lunch or as the perfect side dish to serve with any main dish.
It’s always a crowd pleaser and a brilliant way to get pickier eaters to enjoy broccoli – my whole family adore the broccoli with the creamy dressing.
Salad Ingredients
You only need 4 ingredients for the easy broccoli salad recipe that you can mix together in a large mixing bowl or airtight container to store in the fridge:
Broccoli – chop the crunchy broccoli into small florets and grate the stalk into the salad too. So, nothing is wasted and you get to enjoy the full broccoli nutritional benefits. Simply use a box grater or microplane grater to finely grate the broccoli stems straight into the salad.
Lemon – use as much lemon zest and fresh lemon juice as you like for a creamy lemon dressing.
Sour Cream – is my creamy ingredient of choice in creamy salads. You can used 1/2 to 1 cup, depending on how creamy you’d like your salad to be and also swap the sour cream for mayo or Greek Yogurt if you want instead.
Grated Cheese – makes the salad with fresh broccoli florets into a cheesy meal. I just use already grated cheese, but you could grate your cheese of choice such as a sharp cheddar cheese. Another option is to add in feta or your cheese of choice chopped into bite size pieces instead of grated.
There are plenty of other ingredients you can add to your delicious broccoli salad, such as:
- Salt, Pepper & any other seasoning
- Chickpeas
- Lentils
- Red Onion
- Apple cider vinegar or white wine vinegar
- Crispy bacon
- Sunflower Seeds
- Flaked almonds or crunchy almonds
- Pumpkin Seeds
- Dried Cranberries or sweet raisins
- Walnuts
You can store the salad in a salad bowl covered with plastic wrap in the fridge, although my preference is a glass storage airtight container so that I can easily transport the salad if need be. (Here are glass storage containers on Amazon.)
Creamy Broccoli Salad Recipe
- 1 Head of Broccoli
- 1/2 to 1 Lemon
- 1/2 to 1 Cup Sour Cream
- 1/2 Cup Grated Cheese
- Chop the broccoli florets into bite sized small pieces and move to a large bowl or meal prep containers.
- Grate the stalk over the chopped broccoli.
- Grate lemon over the top of the broccoli mixture and squeeze the juice over a sieve over the bowl to catch any pips.
- Add the sour cream to the broccoli slaw and stir to combine.
- Add the grated cheese and toss until fully incorporated.
- Place into the fridge for a few hours to allow the flavors to develop and broccoli to soften slightly.
- Serve out into a small bowl and enjoy, storing any leftover broccoli salad in the fridge to enjoy within a couple of days.
