Best Broccoli Cheese Soup Recipe

The first time I made this soup my Husband declared it to be the best vegetable soup he’d ever had. So, of course I had to make it again, to share the deliciousness with you.

There’s just something so comforting about this cheesy soup. Each mouthful includes creamy, cheesy goodness that you just can’t get enough of.

You can feel free to add more cheese for an extra gooey and cheesy soup. Also, you can mix up the liquids and include you personal combination of cream, milk, water and stock to cover the soup.

I opt not to blend my soup, but you can always use a stick blender or (carefully) pop the slightly chilled soup into a blender to blend to a smooth texture. Whatever way you choose to enjoy it, you’ll just love this BEST Broccoli Cheese Soup.

Best Broccoli Cheese Soup Recipe

  • 1/4 to 1/2 Chopped Onion
  • 2-3 Garlic Cloves, Peeled and Chopped
  • 1 Head of Broccoli, chopped into bite sized pieces
  • Salt & Pepper, to taste
  • 1/2 Cup Milk of Choice
  • 1/2 Cup Cream
  • Stock or Water, to cover
  • 1/2 to 1 Cup of Grated Cheese
  • Butter or Coconut Oil, for cooking
  1. Melt butter or coconut oil in a saucepan.
  2. Add the chopped onion and garlic.
  3. Cook until translucent and lightly browned.
  4. Add the chopped broccoli, salt and pepper to taste.
  5. Saute together with the onion and garlic, adding more butter or coconut oil if needed.
  6. After a minute or two, add the milk, cream and stock or water to cover.
  7. Bring up to the boil and then reduce the heat to simmer for 20 to 25 minutes or until the broccoli is tender.
  8. You could blend the soup at this point, or leave it as it is and add the soup.
  9. Bubble away for a final few minutes to allow the cheese to melt.
  10. Remove from the heat, pour into bowls and top with more cheese if you want.
