Parmesan Potato Wedges
These garlic parmesan potato wedges are a crispy homemade best side dish that’s always a huge winner with my family.
The parmesan cheese cooks to give the wedges the crispiest, crunchiest coating imaginable. Once you’ve tried these, you won’t make wedges or chips any other way!
To make the crispy wedges, you only need a handful of simple ingredients. Start by slicing the potatoes into wedges. The cheapest potatoes I can find here are red potatoes that are small in size and regularly cost 99 cents a kilo.
So, my wedges turn out to be quite small as a result. If yous are larger than you may need to cook your wedges for longer than the suggested cooking time. You could also make the recipe with different types of potatoes including russet potatoes, gold potatoes or even sweet potatoes.
The seasoning mixture is up to you. I like to include paprika, garlic powder, oregano and salt. But, you could also add in pepper, Italian seasoning, fresh parsley, onion powder or your herb or seasoning of choice.
The amount of grated parmesan cheese you use also depends on how cheesy and crisp you want your wedges. Also, it depends on how much of a premium your parmesan costs. We get our for just €1.88 a bag, so I tend to be quite generous with it. You can of course include a mix of cheese by adding in your shredded cheese of choice.
Depending on how much you’re making, and the size of your baking tray, you may need to cook your best potato wedges in batches. I tend to use a huge roasting tray so I can easily spread the wedges out so they have a chance to crisp up and become beautifully golden.
You can serve the homemade wedges as a side dish with all kinds of meals or on a serving platter with chicken strips and your favorite dipping sauce, such as sour cream or hot sauce, as a party or game day snack.
Parmesan Potato Wedges Recipe
- 3-4 Potatoes
- 2-4 Tablespoons Extra Virgin Olive Oil
- 1-2 teaspoons Paprika
- 1-2 teaspoons Garlic Powder
- 2-4 Tablespoons Parmesan
- Salt & Black Pepper, to taste
- Preheat the oven to 200C/400F and line a large baking sheet with well greased baking parchment paper or you could use a large baking dish that’s well greased instead.
- Scrub the potatoes and then carefully slice them into wedges with a sharp knife.
- Place the raw potato wedges into a large bowl.
- Pour over the olive oil and toss to combine.
- Add the paprika, garlic, parmesan, salt, pepper and any other seasoning you like.
- Toss well to cover all of the wedges in the seasoning mix.
- Move the wedges to the prepared baking sheet in a single, even layer.
- Place into the preheated oven for 15 minutes, remove from the oven, toss the wedges and place back into the oven for a further 15 to 20 minutes or until golden brown and crisp to your liking. The baking time will depend on the size of the wedges and how crispy you want the outside of the potato to be.
- Serve immediately with your favorite meal or dipping sauce of choice.
