Keto Broccoli Salad Recipe

We are a couple of weeks into Spring and all of a sudden it has starting snowing here again in Ireland.

There are so many variations to this simple salad that you can really adapt it to your tastes and what you have in your kitchen.

How To Make This Simple Broccoli Salad

Preparing broccoli for the salad

Start with a head of broccoli. Give it a wash and chop the florets into little bite sized pieces.

Don’t discard the stem, it’s wondefully edible and you can finely chop or grate it into your easy Keto Broccoli Salad. In this instance, I chose to do both, chopping some and grating the rest.

Place all your broccoli into a salad bowl and mix through your creamy dressing. I make mine by pouring sour cream, lemon juice and salt over the salad.

You could mix the ingredients together separately and then pour it over the salad. Instead of just sour cream you could use mayo, plain natural yoghurt or a mixture of the three.

I used lemon juice because I had a fresh lemon in the kitchen. You could use Apple Cider Vinegar or another vinegar instead.

Low Carb Salad Toppings Ideas

Here are some ideas for toppings you can mix through your salad:

  • Grated Cheese (my choice in this instance)
  • Pine Nuts, Sunflower Seeds or any other nut or seed
  • Chopped Tomatoes
  • Chopped Peppers
  • Chopped Onion or Garlic – raw or lightly cooked
  • Feta – crumbled or chopped
  • Stevia, to sweeten slightly

As you can tell, this recipe has so many variations, each resulting in a salad which will convert non broccoli fans to broccoli lovers at first bite.

Who wouldn’t love a bowl full of broccoli mixed with a creamy dressing and covered with cheese?! This salad makes the perfect Keto BBQ Side Dish crowd pleaser.

Keto Broccoli Salad Recipe

  • 1 Head of Broccoli
  • 1/2 to 1 Cup of Sour Cream
  • 1-2 Tablespoon Lemon Juice
  • Pinch of Salt
  • 1/2 Cup of Grated Cheese
  1. Chop the broccoli into florets and finely chop or grate the stalk/stem.
  2. Place the prepared broccoli into a salad bowl.
  3. Pour over the sour cream and lemon juice.
  4. Shake over the salt and add the grated cheese.
  5. Stir well to combine and place in the fridge for about an hour to allow the flavours to develop.

  • 1 Head of Broccoli
  • 1/2 to 1 Cup of Sour Cream
  • 1-2 Tablespoon Lemon Juice
  • 1/2 Cup of Grated Cheese

Instructions

  1. Chop the broccoli into florets and finely chop or grate the stalk/stem.
  2. Place the prepared broccoli into a salad bowl.
  3. Pour over the sour cream and lemon juice.
  4. Add the grated cheese and any other seasoning you like.
  5. Stir well to combine and place in the fridge for about an hour to allow the flavours to develop.
