This Root Vegetable Soup Recipe is a warming comfort food meal that’s perfect to enjoy on a chilly day.
The hearty soup is wonderfully versatile, you can include any starchy root vegetables you find in the produce section at grocery stores to create a creamy root vegetable soup meal. (Another favorite root vegetable dish is this easy parsnip mash recipe.)
The simple recipe is also great to meal prep a big batch ahead of time so that you have a healthy meal ready and waiting in the fridge to warm up when you’re craving creamy soups or a vegetarian option to balance a week of meaty meals. Best of all, the soup has great flavor when re-heated after a day in the fridge.
To make the perfect winter soup couldn’t be easier – simply chop all of the vegetables to a similar size, then pop all of the chopped vegetables into a large soup pot, cover with stock or broth and cook until all of the veggies have softened to your liking.
Then, it’s just a matter of either enjoying a chunky root vegetable soup or blending the soup until smooth and you achieve a lovely creamy texture.
Healthy Soup Ingredients
Here are ideas for simple ingredients that you can choose from to include in your easy recipe, depending on your tastes and what you can find at your local grocery store during the cold winter months:
Onion, Garlic or Leek – include your choice of sweet onion, cloves of garlic or leek for added flavor and nutrition.
Root Vegetables – include lots of root vegetables in the soup, choose from carrots, white potatoes, red potatoes, sweet potatoes, celery root, parsnips, beetroot, golden beets, pumpkins or butternut squash.
I’ve skipped the step of making roasted root vegetables, which is often a way to make root vegetable soup. I find my method to be an easy way to create a soup that’s full of sweet flavor, yet with very little effort. You’re more than welcome to make the same soup but with roasted vegetables if you’d prefer the roasted flavor instead.
Seasoning – season your soup with your choice from kosher salt, flaky salt, sea salt, black pepper, garlic powder, ginger root or any fresh herbs you like.
Stock or Water – you can pour over any water, stock or savory broth you like to create the soup. If you’d like to keep the soup vegetarian then just use a vegetable stock, otherwise you can use chicken stock or chicken broth for a deeply nourishing soup.
Creamy Ingredients – to make a luxuriously creamy soup, I usually include plenty of butter and heavy cream. You could swap for other creamy ingredients such as sour cream, milk, coconut milk or coconut cream.
You can top the soup with parmesan, goats cheese, grated cheese or even some red pepper flakes to give the soup some heat.
I’ve often enjoyed the soup as a whole meal during the cold weather time of year with crusty bread or buttered Irish soda bread on the side for dipping.
Root Vegetable Soup Recipe
- 1 Onion, peeled and chopped
- 3-4 Garlic Cloves, peeled and chopped
- 1/2 to 1kg or 1 to 1lbs Root Vegetables (choose from carrot, potato, parsnip, sweet potato or pumpkin)
- 4 to 6 Cups Water or Stock
- Salt & Pepper, to taste
- Butter
- Cream
- Oil or butter, for cooking
- Heat oil or butter in a large pot on the stove top over medium-high heat, when hot add the chopped onion and garlic and cook until starting to soften.
- Peel and chop your root vegetables of choice and add them to the softened onion and garlic.
- Toss to combine and cook for a few minutes, then add salt, pepper and any other seasoning you like.
- Pour over the stock or water, to cover, then bring up to the boil and reduce to medium heat and simmer for 20-25 minutes or until the vegetables have all softened to your liking.
- Once the soup is done, remove from the heat, add the butter and cream then blend, using an immersion blender or stick blender, until smooth and creamy.
- Place the soup back on the stove to bring it back up to the boil, then serve and enjoy. You can store any cooled leftovers in an airtight container in the fridge and use within a couple of days.
