Chicken Soup With Drumsticks

This chicken soup with drumsticks recipe is what I make whenever we need rejuvinating and a hearty, home cooked meal.

Yesterday we returned from a week away in England. All at differing stages of colds, thanks to recycled hotel air and a crazy schedule which saw us stay in 3 different locations within a week.

So, today, my first task (after starting on a week of laundry) is to make an enormous pot of chicken soup.

I went straight to the supermarket this morning and picked up a package of chicken drumsticks – my favourite piece of chicken for making homemade chicken soup.

Why Make Soup With Chicken Drumsticks?

I choose chicken drumsticks because of the flavour in the meat and bones. I’ve sometimes used wings instead, but the drumsticks are easier to handle and de-bone once cooked.

There’s plenty of meat to go around, so a kilo or couple of pounds will create a pot full of soup and enough chicken for a number of generous portions.

The soup is also really quick when compared to making homemade soup or stock with other ingredients. The chicken drumsticks only need one and a half to two hours of boiling time to create a hearty soup, with the chicken tender and falling off of the bones.

You can feel free to include you own personal mix of ingredients including as much or as little onion, garlic, salt, pepper and seasoning as you like. You could also add in chopped carrot, leek or other vegetables.

How to make chicken soup with drumsticks

Chicken Soup With Drumsticks Recipe

  • 1/2 to 1 Onion, peeled and chopped
  • 2-3 Garlic Cloves, peeled and chopped
  • 1kg/2.2lbs Chicken Drumsticks
  • Salt & Pepper, to taste
  • Butter or Coconut Oil, for cooking
  • Water
  1. Heat butter or coconut oil in a saucepan over medium heat.
  2. When hot, add the chopped onion and garlic and cook until starting to soften.
  3. Add the chicken drumsticks, salt and pepper.
  4. Brown the chicken on all sides, cooking in batches if need be.
  5. Once all of the chicken has browned, pour over water to cover.
  6. Bring up to the boil and then simmer for 1.5 to 2 hours or until cooked to your liking.
  7. Remove the chicken from the saucepan, remove the chicken from the bones and then return to the soup.
  8. Serve as is or blend to create a smooth and creamy soup.

Ingredients
