This parsnip mash recipe is creamy, healthy and full of flavor. I only tried parsnip for the first time in my life in my mid 20’s and since then I’ve tried all sorts of ways to enjoy the healthy vegetable.
Parsnip mash has to be one of my favorite ways to bring out the best of the ingredient. You’ll find that pureed parsnips make a great alternative to mashed potatoes.
Parsnips are just coming into season here in Ireland and makes the perfect side dish for wintery meals such as roast beef, roast pork or roast chicken. This creamy mash is the perfect inclusion in your holiday season, Budget Christmas or Thanksgiving Menu.
How To Cook Mashed Parsnips
All you do is bring a large saucepan of water to the boil, add the parsnip which has been peeled and chopped into roughly uniform sized pieces, along with whole, peeled garlic cloves.
You can feel free to make a mash with mixed root vegetables by adding in other root veggies to the pot such as sweet potatoes, carrots and even unique potato varieties such as Yukon gold potatoes.
The garlic is mashed in and infused into the mash to create a wonderfully flavorful side dish.
Once the parsnips have cooked to a mashable consistency, remove from the heat, drain and mash until smooth. You can use a potato masher, food mill or even your food processor to mash the parsnips, just depends on how smooth you’d like the consistency to be.
Add in milk, butter, salt and black pepper, to taste, and keep mashing until you have a creamy pot of parsnip mash. You can feel free to swap the whole milk for heavy cream or a dairy free alternative. You can also mash in a little olive oil, fresh chives or white pepper for a unique flavored side dish.
Move the mashed parsnips recipe to a serving dish, serve with your favorite comfort food meal and store any leftovers in an airtight container to enjoy within a few days.
Creamy Parsnip Mash Recipe
- 500g/1.1lbs Large Parsnips, peeled and chopped
- 2-3 Fresh Garlic Cloves, peeled and kept whole
- 1/4 Cup Milk
- 2 Tablespoons Butter
- Salt & Black Pepper, to taste
- Bring a large pot of water to the boil and add salt.
- Once bubbling, add the chopped parsnips and garlic.
- Cook for 15 to 20 minutes or until fork tender and easily mashable.
- Remove from the heat, add the milk, butter, salt and black pepper to taste.
- Mash until smooth and creamy, adding in more milk and butter for a creamier texture, then move to a serving bowl and enjoy immediately.
This mashed parsnip is perfect through winter to enjoy as a side dish with a roast or stew.
