Irish Potato Soup Recipe
This Irish Potato Soup Recipe is inspired by a hearty soup that I recently has the pleasure of enjoying at a traditional Irish pub in Dublin. (Here’s my full guide to What To Eat In Dublin.)
Since moving to Ireland over 5 years ago, I’ve developed a love for a meal of a comforting soup with a side of Irish soda bread – slathered with plenty of Irish butter. It’s a meal you’ll find on pub and restaurant menus all over the Emerald Isle.
If you’re lucky enough to visit this beautiful country, I urge you to sample at least one warming bowl of soup while you’re here. When you do you’ll be met the a luxuriously creamy (or heartily chunky) bowl full – always served with the perfect Irish bread and butter for dipping.

In the meantime, you can make your own bowl full of perfection at home. You don’t have to just wait for St. Patrick’s Day – you can enjoy the traditional Irish potato soup all year around.
Best of all – it’s a super budget friendly meal to make. Potatoes have been only 49 cents for a kilo (2.2 lbs) at Aldi lately, so the whole bowl full barely costs a Euro.
You can create as creamy or chunky a soup as you like by either serving the soup as it is, mashing with a potato masher to the perfect texture you’d like or using an immersion blender or stick blender to create a super silky smooth soup.
The Simple Ingredients For The Easy Recipe
Here’s the list of ingredients, as well as some ideas for additional ingredients that you can include, depending on your own personal tastes, dietary requirements and budget.
Onion and Garlic – I always feel that the more the merrier when it comes to garlic, so I always add in an extra clove or two than a recipe says. You can include as little or as much onion and garlic as you’d like You could also add in green onions or leek to create a potato leek soup.
Potatoes – ideally include a floury potato to create a thick and chunky soup, although you can use whatever peeled potato you like. Chop the potatoes into roughly the same sized pieces so that they cook evenly.
Milk – cooking the potatoes in a mixture that includes whole milk results in a soup that has a beautiful, creamy texture that makes the ultimate comfort food meal. You can swap to coconut milk or almond milk if you’d prefer for the easy creamy potato soup to be dairy free.
Stock or Water – choose from chicken stock or chicken broth, vegetable stock or vegetable broth, depending on whether you want the soup to be vegetarian or not. I’ve also successfully made the soup with water, to allow the other flavors of the soup to sing. Just be sure to add plenty of salt, pepper and any other seasoning you like in that case.
Seasoning – add in salt, black pepper or any other seasoning you’d like to flavor the simple potato soup recipe with.
Loaded potato soup – add in even more flavor to the best potato soup recipe by sprinkling over Irish cheddar cheese and cooked, crispy bacon bits.
You can also add in your favorite toppings to the delicious soup, such as fresh herbs, a little dollop of sour cream or heavy cream over the top of each bowl for added healthy fats and flavor to the meal that’s perfect to enjoy during the cold winter months.
Serve your old fashioned potato soup with Irish soda bread, brown bread, sourdough bread or any crusty bread you like, as long as it’s slathered with plenty of butter!
Irish Potato Soup Recipe
- 1 Onion, peeled and chopped
- 3-4 Garlic Cloves, peeled and chopped
- 1kg/2.2lbs Potatoes, peeled and chopped
- 1 Cup Milk
- 1-2 Cups Stock or Water
- Salt & Black Pepper, to taste
- Coconut Oil, Olive Oil or Butter, for cooking
- Place a soup pot on the stove top over medium heat, add in some coconut oil, olive oil or butter.
- Once the large pot is hot, add in the chopped onion and garlic to brown slightly.
- Once the onion and garlic has browned, add in the chopped potatoes, along with salt, pepper and any other seasoning you like, to taste.
- Toss the vegetables, then pour over the milk and stock or water, to just cover the potatoes.
- Bring up to the boil, then reduce the heat to medium-low heat to gently simmer the soup and then cook for 20 to 25 minutes cooking time or until the cooked potatoes are soft and easily mashable.
- Remove the homemade soup from the heat, then either serve as is, mash with a potato masher or carefully blend with an immersion blender, regular blender or food processor, depending on whether you’re wanting a chunky potato soup or a creamy soup.
- Serve immediately with your choice of optional toppings, let leftover soup cool to room temperature then move to an airtight container and enjoy within a couple of days.
