This sausage tray bake recipe makes the easiest dinner that the whole family will enjoy. Best of all, you can easily adapt the original recipe to suit your budget, tastes and dietary requirements.
I just adore tray bake recipes – you simply throw everything into a large baking tray and then bake it all together until you have a warming, comforting delicious meal.
The Simple Ingredients
Here are the ingredients you can include in the meal prep for your sausage traybake:
Sausages – you can include any type of sausages you like. Choose from turkey sausages as I have used, or your preferred variety including pork sausages, beef sausages or chicken sausages for a tray bake with good quality meat sausages or veggie sausages or vegan sausages for a meat free meal with vegetarian sausages.
Onions – red onion is my onion of choice, you may prefer another variety such as brown onions or sweet onions in your easy sausage traybake.
Garlic Cloves – I like to include garlic cloves peeled, without their garlic skins, in my mix of vegetables, you can leave it out if you’re not a garlic fan or swap to garlic powder in your seasoning instead.
Potatoes – include chopped potatoes to make the dish a whole, hearty meal. The great thing is that you can use whatever variety you like from red potatoes, new potatoes or even sweet potatoes.
Carrots – for a pop of color, I like to add in chopped carrots to add extra nutrition to the whole meal.
Seasoning – I simply added in a few generous shakes of salt and oregano, you can choose to add in black pepper or your seasoning or fresh herbs of choice, such as a few sprigs of thyme.
Stock or Water – a great way to keep the comfort food meal full of lots of flavour (and without drying out) is to pour over stock, such as chicken stock, beef stock or vegetable stock, or even water half way through the cooking time. You could also dissolve some gravy granules in boiling water to make a rich, flavorful sauce for the dish.

Here are more ingredient ideas that you can mix and match to create the perfectly flavored tray bake for you and your family:
Lemon – create a lemon chicken tray bake by adding in a couple of chopped lemon wedges, grated lemon zest or squeezing over some lemon juice.
Sweetness – add in a little maple syrup or honey to create a sticky sausage traybake recipe that may even convert picky eaters to try a plate full of vegetables.
Flavor – stir through your favorite flavor that you usually like to include in your meals such as balsamic vinegar, wholegrain mustard, honey mustard sauce or soy sauce.
More Vegetable Ideas – there really are so many different vegetables that you can add to your perfect midweek meal. Choose from bell peppers such as red peppers or yellow pepper, cherry tomatoes or brussels sprouts.
Sausage Tray Bake Recipe
- 2-3 Packs Of Your Favourite Sausages
- 1-2 Onions
- 4-6 Garlic Cloves
- 500g/1.1lbs Potatoes
- 250g/0.5lb Carrots
- Extra Virgin Olive Oil
- Sea Salt, Black Pepper and Seasoning, to taste
- 1 Cup Stock or Water
- Preheat the oven to 180C/350F and get out an oven proof dish or large roasting tin.
- Chop the sausages into bite sized pieces and place in the dish.
- Peel and slice the onions and garlic cloves and add to the sausages.
- Chop the potatoes and carrots into roughly uniform sized pieces, about the same size as the sausages, and add them to the dish.
- Drizzle over extra virgin olive oil, shake over a little bit of salt, pepper and any other seasoning you like.
- Toss until well combined, ensuring the ingredients are in a single layer, then place in the preheated oven for 20 minues.
- Remove the roasting dish from the oven, toss everything around, pour over the cup of stock or water and return to the oven for 20 to 35 minutes, until everything is golden brown and cooked through.
- Remove from the oven and serve immediately, storing any cooled leftovers in an airtight container in the fridge to enjoy the next day.
