This simple pot roast recipe creates the best results, with tender meat that has so much flavor. 

The whole family will love the easy dinner any day of the week, especially as a Sunday dinner to look forward to through the week and then enjoy leftover pot roast for days as easy meals.

The simple ingredients for the easy one pot meal

These are the simple ingredients that you’ll need to be able to create the ultimate comfort food meal: 

Meat – the best cuts of beef for the flavorful dish are large beef roast cuts that work well with a slow cooking method to be able to slowly release the tough connective tissues. The name of the cut of meat will vary depending on where you live, so it may be called topside, round roast, chuck roast or rump roast. (Here are more ideas for recipes with cheap meat cuts.)

Vegetables – the best thing is that you can adapt the perfect meal to suit your own tastes and dietary requirements by including your choice of vegetables. I went for onions, potatoes and carrots. 

Cooking liquid – you can flavor your beef pot roast with your choice of cooking liquid. Choose from water, beef stock, a red wine such as Pinot Noir or even a little tomato sauce or Worcestershire Sauce for an even richer flavored sauce.  

How to make an easy pot roast recipe

Seasoning – I’ve simply included plenty of shakes of salt for seasoning, you could also add in black pepper or your seasoning of choice to taste. 

Extra ingredient ideas – add in chopped mushrooms, broccoli, cauliflower, brussels sprouts, celery or parsnip as additional vegetables and you can add in fresh herbs such as fresh thyme, fresh rosemary or bay leaves. 

Sides –  serve the classic pot roast recipe with your choice of sides. Some of our favorites include broccoli and peas, but you may also want to serve a hearty Sunday pot roast with creamy polenta or mashed potatoes.

Simple Pot Roast Recipe

  • 1.5 to 2kg/3-4.5lbs Pot Roast – Such as topside, round roast, chuck roast or rump roast
  • 2-3 Onions, Peeled and Chopped
  • 3 Cups Liquid (Water/Stock/Wine) 
  • 1/2 to 1kg/1-2lbs Potatoes
  • 4-6 Carrots 
  • Salt, Black Pepper and Seasoning, To Taste 
  1. Preheat the oven to 150C/350F and get out a large roasting dish. 
  2. Heat a little coconut oil or olive oil in a large frying pan, and when hot, sear meat for a few minutes each side to brown and seal in the juices. 
  3. Move the browned meat to the roasting dish, along with the chopped onions. 
  4. Pour over the liquid and shake over the seasoning, cover and place into the preheated oven for 2 hours.
  5. After 2 hours, turn the meat over, peel and chop the potatoes and carrots and return to the oven for 1.5 to 2 hours or until the perfect pot roast is fork tender.
  6. Serve with your sides of choice, then store any cooled to room temperature leftovers in an airtight container to enjoy within a couple of days.
