These pancakes with meat make a brilliant low carb, high protein breakfast or light meal option and have only 4 ingredients, best of all – no flour is needed to bind the pancakes together.
It may sound like a slightly peculiar recipe, it’s really just a simple way to prepare and enjoy a low carb, high protein meal – and my whole family adores them! They are a cross between pancakes and an omelette, though leaning more towards pancakes, hence the recipe name.
You can make them to enjoy straight away or meal prep a batch to grab and go for breakfast. We’ve enjoyed them both warm from the pan and chilled from the fridge, either way they make a tasty, nutritious meal that’s quick and easy to prepare. The Simple Ingredients For The Easy Recipe
Here are the 4 ingredients you’ll need for the simple recipe, as well as lots of ideas for extra ingredients to adapt the pancakes to your tastes:
Onion – a chopped onion adds plenty of flavor to the pancakes, you could also grate in a garlic clove or two, or mix some chopped green onions into the pancake batter as well. I’ve chopped the onion, but you can grate onion on a box grater instead if you’d prefer.
Ground Beef Mince – you can use beef mince as I’ve used, or swap for chicken mince, turkey mince, lamb mince or ground pork mince instead for the high protein inclusion. (For more inspiration, here are high protein travel snacks.)
Seasoning – you can include salt, black pepper or your seasoning of choice such as garlic powder, onion powder, Italian seasoning, oregano or paprika.
Eggs – including eggs in the pancake batter adds in plenty of protein and also provides structure to the pancakes without the need for any all purpose flour.
Toppings – these pancakes are perfectly flavorful as they are, but you’re welcome to serve them with a dollop or two of sour cream as a topping or soy sauce as a dipping sauce if you’d like.
Pancakes With Meat Recipe
- 1 Onion
- 350g/12oz Ground Beef Mince
- Salt, Black Pepper & Seasoning, to taste
- 6 Eggs
- Heat a large nonstick frying pan or skillet over medium heat to medium-high heat on the stove top and add coconut oil, olive oil, sesame oil or butter to melt.
- While the pan is heating, peel and chop the onion.
- Once the pan is hot, add in the chopped onion, ground meat, salt, pepper and any other seasoning you’d like.
- Cook, tossing regularly, until the meat has browned, then move it from the pan to a large bowl.
- In a separate bowl, whisk the eggs with a wire whisk until well combined, then mix through the cooked meat filling to form a pancake batter.
- Add a little bit more cooking oil or butter to the bottom of the pan, then drop 2 tablespoons of the egg mixture per pancake into the hot skillet. You’ll probably have to make the pancakes in batches, depending on the size of your large skillet, fill the pan, then once each batch is cooked, cook more until all of the remaining batter has been used.
- Cook for a 3-4 minutes a side, until golden brown on both sides, then serve immediately or allow to cool to room temperature, move to an airtight container and enjoy chilled from the fridge within a day.
