3 Microwave Chocolate Dessert Recipes
We’ve spent the past week touring the gorgeous Ring of Kerry in Ireland. (Here are my Ring Of Kerry Highlights.) And, while my home doesn’t have a microwave, there has been one in the apartment we have been staying in while touring.
So, I’ve been making all kinds of decadent microwave chocolate dessert recipes to warm us up after a day exploring the chilly outdoors.
In this post I’ll be sharing 3 of the best which I’ve been making over and over again for the family through the week. They are rich, warming, chocolatey treats that are perfect for when you want a rich chocolate dessert – fast!
3 Ingredient Keto Chocolate Mug Cake
This first microwave chocolate dessert is an easy 3 ingredient keto chocolate mug cake. All you need is:
- 1 Egg
- 1 Tablespoon Cocoa Powder
- 2 Tablespoons Stevia
Mix the egg in a microwavable mug. Add the cocoa powder and stevia and mix to combine.
Place into the microwave for 1 minute. Have a look if it’s done, otherwise pop it back into the microwave for 30 seconds a time until done.
Enjoy as is or topped with berries, whipped cream, cream or ice cream.
Microwave Gooey Chocolate Pudding
This chocolate pudding is a gooey, chocolatey brownie dessert that has only 5 ingredients. You’ll need:
- 2 Tablespoons Butter
- 2 Tablespoons Stevia
- 2 Tablespoons Cocoa Powder
- 1/4 Cup Almond Milk (or your milk of choice)
- 1 Tablespoon Coconut Flour
Pop the butter into a microwaveable mug and place into the microwave for 20 to 30 seconds, or until melted.
Add the stevia and cocoa powder and stir to form a paste.
Pour over the almond milk to loosen the paste to a milky mixture.
Add the coconut flour and stir to form a thickened pudding.
Place into the microwave for 1 minute, mix and cook for a further 30 seconds to 1 minute or until heated and cooked to your liking.
The chocolate pudding is creamy, rich and a truly decadent dessert.
Microwave Hot Chocolate
Hot chocolate is an easy dessert that I sometimes even have as a meal to start or finish my eating for the day. You’ll need:
- 1 Cup Almond Milk (or your milk of choice)
- 1 Row Low Carb Chocolate (like this)
- 1 teaspoon Stevia (or more, to taste)
- Cream for topping
Pour the milk into your mug, about 3/4 full. Place into the microwave for 1 minute and 30 seconds.
Meanwhile, chop or break the row of chocolate into small, easily melt-able, pieces.
Remove the mug from the microwave and stir through the chopped chocolate and stevia.
Place back into the microwave for a final 30 seconds or until the chocolate is completely melted and hot chocolate warmed to your liking.
Remove from the microwave, top with whipped cream and enjoy.
