This truly is the Best Basque Burnt Cheesecake Recipe – it has only 7 ingredients, whips up quickly and bakes to a creamy, dreamy cheesecake dessert.
After watching this video recipe on the Bon Appetit YouTube Channel for how to make a Basque Burnt Cheesecake, I couldn’t resist attempting to create a my own version of the crustless cheesecake.
I went for coconut flour instead of flour, making it a fully gluten free cheesecake. And, I reduced the ingredient volumes so that the batter would easily fit into my springform tin.
The adaptations create a dessert that has the characteristic burnt top and silky smooth, creamy cheesecake texture below.
To actually make the cheesecake couldn’t be simpler. You just add all of the ingredients into a bowl, one at a time, whisking as you go until you have a frothy, creamy mixture.
Make sure that the baking tin is well lined, with the baking paper going well over the sides, overlapping if need be. This makes sure that nothing sticks to the baking tin during the baking process.
Then, bake for around an hour until burnt on top but still jiggly within. You can enjoy warm from the oven or allow to cool completely, move to the fridge then serve chilled. Either way it’s a creamy cheesecake that’s a delight to enjoy.
Best Basque Burnt Cheesecake Recipe
- 21 ounces/600g Cream Cheese, Softened
- 1/2 Cup Stevia, Sugar or your sweetener of choice
- 4 Eggs
- 1 Cup Cream
- Pinch of Salt
- 1/2 to 1 teaspoon Vanilla Extract
- 1 Tablespoon Coconut Flour
- Preheat the oven to 200C/400F, get out a round spring-form baking tin and line it with well greased over-lapping baking paper.
- Place the softened cream cheese and stevia or sugar into a bowl.
- Whisk with an electric whisk, until smooth.
- Whisk in the eggs, one at a time, until creamy.
- Add the cream, salt and vanilla and whisk until fully combined.
- Using a spoon, fold through the coconut flour, until completely incorporated.
- Pour the cheesecake batter into the prepared baking tin.
- Place into the preheated oven for 50 minutes to 1 hour or until golden on top but still wobbly beneath.
- Remove from the oven, allow to cool then carefully remove from the baking tin and move to a plate.
- Serve slightly warm or completely chilled from the fridge.
