No Churn Vanilla Ice Cream
This No Churn Vanilla Ice Cream Recipe is adapted from a Mary Berry dessert that’s super simple to make and has no condensed milk, which no churn ice creams often have.
The ice cream is created by making a mousse of sorts, whipping egg whites then heavy cream thickened to stiff peaks before gently folding everything together. So easy – and without the need for an ice cream machine.
The Simple Ingredients For The Easy Recipe
You only need 4 natural ingredients to create the best homemade ice cream:
Whole Eggs – eggs are separated and whisked separate to create a light and creamy egg custard base.
Sweetness – whisk through sugar, stevia or your preferred sweetness of choice to create the perfectly sweet treat to your own tastes. (And dietary requirements.)
Heavy Cream – luxurious heavy cream is whipped into soft peaks to form a super creamy ice cream texture.
Vanilla – for the vanilla flavor use the best vanilla quality vanilla you’re able to acquire, choose from pure vanilla extract or vanilla bean paste for an end result that’s packed with rich vanilla flavors.
Flavor Variations
I adore this ice cream as a pure vanilla ice cream, but you can leave out the vanilla and add in any of the following simple ingredients, that are all easy to find at the grocery store, to create different flavors:
Chocolate – 1/4 to 1/2 cup cocoa powder, chocolate chips or melted and cooled chocolate.
Coffee – 1/2 to 1 teaspoon coffee extract, coffee powder or coffee liquer.
Mint – 1/2 to 1 teaspoon peppermint extract or finely chopped mint leaves.
Orange or Lemon – 1/2 to 1 teaspoon extract or finely grated orange/lemon zest.
Peanut Butter – one of our favorite add-ins is a few tablespoons of peanut butter to create an indulgent peanut butter ice cream.
Berries – create strawberry, raspberry, blueberry or any berry delicious homemade ice cream you like by swirling through chopped berries, pureed berries or berry jam.
No Churn Vanilla Ice Cream Recipe
- 4 Whole Eggs
- 1/3 to 1/2 Cup Sugar or Stevia
- 1 Cup Heavy/Double/Whipping Cream
- 1 teaspoon Vanilla Extract
- Separate the eggs, with the egg whites going into a large bowl for whisking and the egg yolks into a small bowl to add into the mixture later.
- Using an electric mixer, whisk the egg whites until thickened to soft peaks.
- Add the sugar or stevia and whisk until you have glossy, thickened egg whites.
- Set the bowl aside, wash and dry the beaters, then pour the cream into a separate bowl and whisk with the hand mixer until you have thickened whipped cream.
- Get the egg white mixture back and pour in the reserved yolks and vanilla.
- Fold through gently until combined.
- Add the whipped cream into the ice cream mixture and fold through until light and fully incorporated.
- Move the creamy ice cream mixture into a freezer container or covered loaf pan and place in the freezer to harden for at least a few hours.
- Once the ice cream has hardened, remove the airtight container from the freezer and enjoy as is or topped with your traditional ice cream toppings of choice such as fresh fruit, chocolate sauce or caramel sauce.
