Big Green Salad In A Jar Recipe
Lately I’ve been craving more greens and rather than simply make a salad bowl, I had a fun with creating a great big green salad in a jar recipe.
I turned to the wonder that is Pinterest for inspiration and then set about shopping for ingredients and creating a salad in a jar using only green ingredients.
I haven’t specified most quantities, because it depends on the size of your jar and whether you’re making multiple salads at once. So rather you’ll find the ingredients below and the order I placed them in the jar. The only quantities I’ve given guidance on is the dressing and it’s up to you if you prefer yours salads a little saucier or not with whether you add the 1 or 2 tablespoons/teaspoons of the dressing ingredients.
You want to place your tougher ingredients at the bottom as they are hardier and can absorb the dressing without getting soggy.
In this instance I placed the broccoli on the bottom as it’s raw and can do with a little gentle softening in the dressing. The spinach is at the very top to avoid becoming limp and soggy.
You can eat this salad straight from the jar or pour it into a bowl and eat it the old fashioned way…
Here’s what you’ll need:
- Broccoli, cleaned and chopped into bite sized pieces
- 1-2 Tablespoons Extra Virgin Olive Oil
- 1-2 teaspoons Freshly Squeezed Lime Juice
- 1-2 teaspoons Apple Cider Vinegar
- 1/2 teaspoon Salt
- Cucumber, chopped into bite sized pieces
- Mung Bean Shoots
- Grapes, halved
- Pea Shoots
- Pumpkin Seeds
- Spinach
- Place broccoli at the bottom of your mason jar.
- Drizzle over the oil, lime juice, apple cider vinegar and salt.
- Top with the cucumber then bean shoots, grapes, pea shoots, pumpkin seeds and finally the spinach.
- Refrigerate for at least a few hours and up to a few days.
- Once ready to eat, give the jar a good shake to distribute the dressing and either eat straight from the jar or pour into a bowl.
