Mandarin Salad Recipe with 4 Ingredients

Winter has begun here in Melbourne and winter fruit and vegetables are EVERYWHERE! I’ve been craving a sweet, refreshing salad to whisk me away to a warmer climate and so I’ve included wintery Mandarin in this salad.

 

There are only 4 ingredients and it’s super easy to throw together. If you’re lucky enough to be in the Northern Hemisphere, then simply adapt this recipe by omitting the mandarin and trying it with summer vegetables – I imagine it would be delicious with peaches or strawberries!

If you want to add a little extra depth to your salad then feel free to add any or all of the following:

  • Onions – spring or red, finely chopped
  • Dressing – your dressing of choice though I find a bite of the mandarin gives a faux dressing so am happy with that
  • Orange – squeeze over half an orange for an additional citrus hit

Mandarin Salad Recipe

  • 2 Cups Salad Greens (I went with Spinach)
  • 2 Mandarins – peeled, pips removed and broken into segments
  • 1/2 Avocado
  • 2 Tablespoons Slivered Almonds
  1. Place the greens as a bed in a large salad bowl.
  2. Top with mandarin segments and avocado.
  3. Sprinkle over the almonds.
  4. Toss to combine and serve.

As you can tell, it’s this Mandarin Salad is super easy to construct and is just the perfect combination. The creamy avocado, refreshing mandarin and crunchy nuts work so well together – you’ve just got to try it!
