The BEST Chocolate Chip Cookies Recipe

Whenever I follow a recipe from a cookbook I change up the volumes of most ingredients and sometimes the ingredients themselves. As I cook the recipe more and more I make more and more changes until I’m still referring to the recipe in the book, but there are my hand written notes making the recipe my own.

That’s EXACTLY the case with these chocolate chip cookies. They were originally the 10 minute chocolate chip cookies from River Cottage Every Day.

But – I reduced the sugar volume down considerably, changed the volume of most ingredients to cups rather than grams, follow a slightly different method and then cook them for 10-15 minutes instead of just 10.

These are hands down the BEST chocolate chip cookies. From time to time I try other recipes but they don’t even come close to these and I make them so often that I could make them without looking at the recipe, but still like to have the book there to be sure!

The BEST Chocolate Chip Cookies Recipe

  • 100g Unsalted Butter
  • 1/2 Cup Raw Sugar
  • 2 teaspoons Vanilla
  • 1 Egg
  • Pinch of Sea Salt
  • 1 Cup Plain Flour
  • 3/4 Cup Chocolate Chips, Chunks or Buttons
  1. Preheat the oven to 190C/375F and get out a baking tray lined with grease-proof paper.
  2. Melt the butter over low heat. Once melted, pour into a large bowl and allow to cool slightly.
  3. Once slightly cooled, mix through the sugar and vanilla.
  4. Mix in the egg and salt.
  5. Stir through the flour and then when just starting to combine fold through the chocolate until you have a cookie dough.
  6. Place 1 tablespoon per cookie onto the prepared tray.
  7. Place into the oven for 10-15 minutes or until slightly golden.
  8. Allow to cool completely on the tray and enjoy!
