This is one of those Keto friendly recipes which I actually prefer to it’s carby counterpart. This mash is just so flavourful and delicious that it brings any dish to life and I’m sure you’ll prefer it too!

It’s really such an easy recipe. You simply boil together the cauliflower and garlic until easily mashable. Then mash them, together with butter, mascarpone and seasoning to taste and you have a creamy, garlicy bowl full of cauliflower mashed potatoes!

Here are some delicious uses for this Garlic Mashed Cauliflower Recipe:

  • Serve with sausages.
  • As a low carb option to complement lamb shanks, a stew or a casserole.
  • Use in place of potato mash in a cottage pie or shepherds pie.

We usually polish this off in one sitting, but if you have any left over then it’s delicious fried up with eggs!

Garlic Mashed Cauliflower Recipe

  • 1 Head of Cauliflower, chopped
  • 3 Garlic Cloves, peeled and finely diced
  • Salt and pepper to taste
  • 2 Tablespoons Butter
  • 2 Tablespoons Mascarpone
  • Milk of choice (Optional)
  1. Pour water into a large pot, leaving enough room for your caulifower, and bring it up to the boil.
  2. Once boiling, add the caulifower, diced garlic, salt and pepper to taste.
  3. Simmer until the caulflower is easily mashable.
  4. Once done, drain and mash, along with butter, mascarpone and additional salt and pepper to taste.
  5. If you’d like your cauliflower mash extra creamy then add a few (or more) tablespoons of your milk of choice.
