This past week we celebrated my Husband’s 40th Birthday. The day before his birthday, we enjoyed an adventure into the city to shop for gifts. Here’s a video of the highlights and what I ate for breakfast, lunch, dinner and snacks during the day:

The actual day of his birthday was full of celebratory meals, so again I filmed a video sharing all the delicious food we enjoyed through the day, including the recipe for Chocolate Coconut Smoothie that I share below.

Once you look into low carb celebration meal options, you realise that there are so many delicious options to choose from that it’s easy to cater for a crowd with low carb goodies, while still providing a few extra options for those carb loving guests. Like with the Roast Lamb I made in the video above. My Husband and I had roast lamb with a side of spinach while I roasted a tray full of potatoes and carrots for our guests to enjoy.

The past couple of months I’ve been developing low carb smoothie recipes for an eBook full of (you guessed it) low carb smoothies.

 

This smoothie is one which I have made time and time again and it tastes just as delicious every single time and if I’m stumped with a new recipe, I just make this one to make myself feel better! (Maybe that’s why it’s taking so long to finish… I keep wanting to make this smoothie!)

It’s richly chocolatey, low carb and high fat – perfect for the Keto Diet.

Chocolate Coconut Smoothie Recipe

  • 1/2 Cup Milk of Choice
  • 1/4 Cup Coconut Milk
  • 1/4 Cup Cream
  • 1/2 Tablespoon Cacao Powder
  • 1 teaspoon Sweetener of Choice (I chose Stevia)
  1. Place all of the above ingredients into a blender.
  2. Blend until smooth, pour into a glass and enjoy.
