Cauliflower Mac and Cheese

This is one of the very best low carb, keto diet friendly recipes. It’s super easy to prepare and tastes like a cheesy mac and cheese, only there’s cauliflower in place of carb-full pasta and it takes mere minutes to prepare. So, you can be enjoying a bowl full of cheesy goodness in no time at all!

You can of course adapt this recipe to make it go further by using double or more of each ingredient. It’s my go to lunch that I make for myself when I’m home, that’s why the recipe if just for one!

There are a couple of ingredient adaptions I should mention:

  • You could add chopped garlic or onion in with the cauliflower.
  • When adding the cheesy sauce, you could add mustard or swap the mascarpone for cream cheese if you prefer.
  • Feel free to use your cheese of choice. I just always have a MASSIVE bag of grated cheese, ready and waiting in the fridge so I can make this Cauliflower Mac and Cheese at a moment’s notice. (I also love the cheese in cheesy scrambled eggs!)

Yes, I don’t provide the volume for the cream or cheese, as it’s up to you how saucy and cheesy you want your finished dish. Also, take your macros/calories into account.

Start with a little and then add more until you’re happy. Although my rule of thumb is that if you’re not sure if there’s enough cheese, add more!

One Pan Cauliflower Mac and Cheese For One Recipe

  • 1/4 Head of Cauliflower
  • 1 Tablespoon Mascarpone Cheese
  • Cream
  • Grated Cheese
  1. Chop the cauliflower into bite sized pieces.
  2. Heat a little butter or oil in a large frying pan.
  3. When melted add the cauliflower and cook, stirring regularly, until the cauliflower is golden and cooked through.
  4. Once the cauliflower has cooked to your liking, it’s time to make the cheesy sauce.
  5. Add the mascarpone and cream to the cooked cauliflower and stir to combine.
  6. Cook for a couple of minutes and then add the grated cheese and cook until the cheese has melted and the sauce has thickened.
  7. Remove to a bowl and enjoy.
