There’s something so comforting about this simple dish of cinnamon scrambled eggs. 

I adore all things cinnamon, so it was only a matter of time before the comforting ingredient found it’s way onto my breakfast plate!

This is sort of a low carb version of cinnamon French toast. Well, a teeny tiny bit at least thanks to the dash of cinnamon and sweeter addition of stevia, or your sweetener of choice.

It may not look like a huge breakfast, but the nourishment from the healthy fats in this dish mean it’s incredibly satiating and satisfying.

You can enjoy your classic breakfast of cinnamon eggs as is, or top with a little bit of pancake syrup or a simple pat of butter for extra indulgence.

Cinnamon Scrambled Eggs Recipe

  • 2-3 Eggs per person
  • 1-2 Tablespoons Cream
  • Ground Cinnamon
  • Stevia
  • Butter or Coconut Oil, for frying
  1. In a bowl, whisk together the eggs and cream until smooth.
  2. Heat butter or oil in a frying pan.
  3. When hot, add the whisked egg mixture and cook until the scrambled eggs are cooked to your liking.
  4. Once cooked, remove to a plate, add a shake of ground cinnamon and a sprinkling of stevia to the top of the eggs and enjoy.
